If you season and fry hake fish while it's still frozen,the frost in the fish will reduce the oil temperature,such that it won't be as hot as it ought to be and it will require a few minutes to bring up the oil to the required temperature. Those precious minutes that it will take to bring up the oil to the required temperature fully means that the fish will not have sufficient heat to hold it together,and it will scatter. ● Always deep fry hake, use a non stick pan if possible, if you do not fry with sufficient oil the fish will sit at the bottom of the pan and possibly stick to it,making it impossible for it to be flipped over without falling apart. ● Ginger and garlic are good for seasoning hake,but ensure that while grinding ,you do not add too much water, a runny marinade sticks to the bottom of the frying pan,so that when you fry the 2nd and 3rd batches,it becomes difficult to lift them as they're now glued to the sticky marinade at the bottom of the pan. 🐟Strictly my observations ,let's read yours.
