So a few days ago I received some products from the people at Very Lazy with a bit of a challenge... to create a healthy recipe under 500 calories 🤔thankfully that is my favourite kind of challenge so this is my response! Whole grain pancakes with a garlic creamy spinach filling and green asparagus. Since they threw in some chilli paste I added a bit of that for a bit of a kick 🌶! If you eat them 3 it’s about 500 calories.
For the pancakes:
140 ml. Oat milk
60 gr. of whole meal flour
Large pinch of salt
For the filling:
2 tsp. Very Lazy garlic
1/2 tbs very lazy chilli paste
1/2 onion finely chopped (I could do with some very lazy onion to be honest 😂)
100 gr. fresh spinach
2 tbsp 0% Greek yogurt
45 gr. low fat feta cheese
Salt & pepper
Pan fried green asparagus
Extra virgin olive oil
First make the crepe mix and let rest for a bit while you cook the filling.
This helps the flour get the moisture and helps with the flavour when cooked.
In a pan cook the onion, garlic and chilli in a bit of olive oil until tender. Add the spinach, salt and pepper and wilt them.
In bowl, mix the yogurt with the feta cheese and add salt to taste, mix the spinach in and set aside.
Pan fry the asparagus and set aside.
Now brush the surface of a non sticky pan with olive oil and pour enough crepe mix to cover the surface in a thin layer. Let cook for 30 seconds and then lay some spinach mixture on top and three asparagus. Carefully lift the sides to fold and close. Repeat until you are done with the ingredients. Easy with Very lazy and so pretty 😜.
