As I look towards spring I remember this one from my summer menu. Apparently I never posted this pic.
This Swizzle Cocktail is inspired by the Freyberg apple. The apple was developed by New Zealander J.H Kidd in the 30's and 40's. (He also created the Gala apple which is his most famous creation.)
The Freyberg has a distinct liquorice flavour with a complex after taste. So with that I have used bar spoon of Absinthe, 1.25 Bacardi White, .5 St Germaine, 1 Clear Apple Juice, .75 Cinnamon Syrup, 2 dash Bittered Sling Celery Bitters, with Peychauds and Mint on top.
Every ingredient is designed to compliment an apple style experience without tasting like an apple, similar to the Freyberg Apple. I hope you enjoy and if you whip one up, let me know what you think.
