It’s my favorite night of the week - tacos!!! I’m lucky my kids have adopted the same love of taco meat (theirs with corn shells & cheese 🤷🏼‍♀️) and we eat tacos ALOT! This cold weather got me feelin’ sooouper into this warm, delish bowl of Pozole-less Pozole Verde! My best gal @themdrntomboy made Pozole for us awhile back and it was so good, I wanted to make a Paleo / Whole30 version. (Note: the soup recipe is #whole30 , the Siete chips are #foodfreedom )

My website is in transition right now, so I am putting the recipe here ⬇️⬇️ 4 cups chicken broth
3 lb chicken breast
1 lb tomatillos, husked and quartered
1 onion, diced
3 jalapenos, diced
1 can mild diced green chiles
1 can hot diced green chiles
2 cloves garlic, minced
2 cups cauliflower bits (riced or slightly larger pieces)
1 green bell pepper, diced
Cilantro
1 lime
Topping options: limes, avocado, cilantro, cabbage, radishes 1. Add chicken broth, chicken, tomatillos, onion, jalapeno, chiles, and garlic into a large soup pot on high heat.
2. Bring to a boil, then reduce heat to a simmer. Simmer for 30 minutes.
3. Remove chicken breasts from pot. Add a handful of cilantro leaves to the pot. 4. Blend the remaining soup ingredients using an immersion blender or remove the large pieces from the soup using a slotted spoon into a blender. Blend until the soup is mostly pureed.
5. Shred the chicken using 2 forks. Add back to the soup. 6. Add in the cauliflower and the bell pepper. Let simmer for another 15 minutes. Serve and top with toppings of choice!

I keep saying our baby is going to come out looking like a macaroni and cheese noodle covered in hot sauce. In my first trimester, I had a hard time eating anything besides mac&cheese, and I’m currently craving ALL the spicy foods. I’ve gone through a whole bottle of Tabasco in the past few weeks. What I’d really like is for it to be summer so I could make these Chili Lime Chicken Burgers from the blog, add some extra jalapeños to the chicken mixture and then dip each bite in a pool of something 🌶. Anyone else feel me on this? Moms...did you have any cravings? Anyone have a guess what they might crave while pregnant? Lots of veggies this morning with breakfast! Been a bit since I’ve posted. Currently doing my first round of the whole30 program, 13 days in.

Do you find it hard to eat a healthy dinner when you are busy? Me too! It is so easy to reach for a bowl of muesli, but this Korean tofu stir fry is the business and so quick to make! It uses Korean red pepper paste as the base, which is a fermented food, so good for your guy. It also has some umami-heat! Where can you buy it? In oriental supermarkets and @waitrose.⠀

Can't believe I'm doing this but here it goes!

#4 day 1 & day 30 mirror image because on day 1 I used Ig video which flips your image but today I used camera which does not! So long story short, slide 4 is a collage mirror image of the same side but 30 days apart. Doesn't seem like much difference visually, to me, however the girl on day 1 would've never shared these photos but the girl on day 30 gives zero f*cks!
Weight loss was not the driving force behind doing the program and I don't really think I lost anything more than water weight and bloat but my clothes definitely fit better! The most important thing is I broke my sugar addiction, detoxed my gut and took back control of my food related thoughts & behaviors! I do not like being controlled by anything! Having struggled with drug addiction in the past, I have to be alert and mindful to anything or anyone I perceive as a threat to my control.

Fact. It’s not just what you put in your body. But it’s also the way it enters your body and the state which you consume food.⁣

This goes beyond your calorie counting, macros, micros, genetics, microbiome and etc.⁣
—⁣
I am afraid this is basic common sense & bio chemistry of breaking down food yet we forget about the importance of being present eating in a parasympathetic aka rest and digest state and the mechanical digestion of chewing. We should be aiming for around 20 chews per mouthfuls.⁣
We also think a supplement like a digestive enzyme or probiotic is the answer and not focus on the fundamentals!⁣

Inhaling food (btw not to be confused with the medical term Aspiration pneumonia) is a detriment to our health it causing inflammation and stress.⁣
It can cause digestive issues such as belching, bloating and gas. It reduces our immune system capacity and salvia production our first line of defence and 1st chemical digestive stage.⁣
It may reduce stomach acid = knock on effects = b12 zinc etc⁣
less surface area for digestion system to work with = less nutrients⁣
more stress hormones being active = sleep + body comp, chances of undigested food = immune system + stabilisation⁣
all equalling a recipe for disaster!⁣
