Apple arugula salad with toasted walnuts - Apples add a sweetness and crunch to this healthy and great tasting salad. You can use baby spinach in place of the arugula if you prefer.
Ingredients: 2 red apples 10 ounces baby arugula 3 stalks celery 1 cup toasted walnuts ¼ cup honey ¼ cup lemon juice ¼ cup oil 2 tablespoons crushed pink peppercorns Pomegranate seeds to garnish
Directions: Mix honey, lemon juice, oil and peppercorns together in a jar or whisk in a bowl Pour dressing over arugula Top arugula with thinly sliced apples and toasted walnuts Mix salad and top with shaved pecorino or pomegranate seeds
TIP: PEEL THE OUTER LAYER OF CELERY TO GET RID OF BITTERNESS.
TIP: FOR A DAIRY OPTION, SHAVE PECORINO ROMANO OR PARMESAN CHEESE ON TOP OF SALAD WITH A PEELER.
