Results from one small cross-sectional study (link in the bio) suggested that a plant-based diet is the more important intervention than physical activity for blood pressure and arterial health.

The study compared sedentary vegans, endurance athletes (matched for body mass index with the vegan group) consuming a Western diet and running avg. 48 miles per week, and sedentary subjects consuming a Western diet. Blood pressure was significantly lower, and carotid artery intima-media thickness was lower in the sedentary vegan group compared to the highly active omnivores.

It is important to keep in mind the limitations of the study. Firstly, the study involved a relatively small sample size. There were 21 sedentary vegans, 21 marathon running omnivores, and 21 sedentary omnivores. The results have also not been replicated, but it is a surprising finding nevertheless.

I've been taking over the @sprout_market today - head over there to see what I've been up to & how I made these delicious mushrooms 🍄🍄🍄 Dinner tonight was mini-stuffed mushrooms (stuffed with turmeric quinoa, capsicum, carrot & capers) & a green salad with crispy chickpeas, toasted black sesame & miso tahini dressing ☺️ All up took me under an hour including bake time!

These are my Sticky Date Spiced Oats 😍 Is there any better comfort brekky for this 9 C Sydney morning? ❄️ Don't make the same oats every morning, get creative! 🎨 In doing so you add a different nutrient profile to your meal ☺️ To make... Cook 1/3 cup rolled oats in 1 cup water with 1 tbsp chia seeds, 1-2 tsp xylitol & a pinch of sea salt until water is absorbed. Add a splash of plant-based milk & remove from heat. Stir through cinnamon, 1 chopped date & drizzle with almond butter & a sprinkle of almonds/walnuts/both! YUM! 🍮 All ingredients (except dates) available on Sprout! Sometimes I use their buckwheat cereal too, for a gluten-free version 👌

🍴HUMMUS w/ POTATOES
This is a meal I always eat when I'm tired and lazy. It takes minimal effort, is cheap but still nutritious and delicious.

Creamy Garlicy Chicken Roast Recipe

Ingredients
6 bone-in, skin-on chicken thighs
sea salt and black pepper, to taste
5-6 cups organic baby spinach, chopped
12 ounces red or new potatoes, cut into small bites sized pieces
1 red bell pepper, diced
2 Tbsps coconut oil, avocado oil, or clarified butter

For the cream sauce:
1 Tbsp coconut oil, or clarified butter
4 cloves gresh garlic, minced
1 Tbsp gluten free flour
2 cups unsweetened coconut milk
1 tsp dried thyme
1/2 tsp dried basil
sea salt and freshly ground black pepper, to taste

Instructions
Preheat oven to 350 degrees f.
Lightly oil a 9×13 baking dish or coat with nonstick spray. Season chicken with salt and pepper, to taste. Melt 2 Tbsp coconut oil in a large skillet over medium high heat.

Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; set aside.

In the same skillet, stir in garlic, and red pepper and cook for about 2-3 minutes, then add in the spinach. Cook, stirring occasionally, until it begins to wilt, about 2 minutes; Add in the coconut milk.
Meanwhile, in a small bowl, whisk in flour and 2 Tbsp water. Whisk well to combine.

Pour this mixture onto the skillet, whisking until
incorporated, about 1-2 minutes. This sauce will begin to thicken.

Place chicken in a single layer into the prepared baking dish. Top with potatoes, spinach and coconut cream sauce. Place into oven and roast until completely cooked through, reaching an internal temperature of 165 degrees f. about 30 minutes.
