But a lot of us are lucky enough to have access to the same familiar flavours and textures we grew up with so there's not even any sacrifice involved. In current day Australia we get to choose both taste AND ethics. 🐠🐟🐑

There's nothing like a good old-fashioned road trip! πŸš™

I've been absent from Instagram for the past week or so, and that's because we've been exploring Arches & Canyonlands National Parks just outside of Moab, Utah.
Spending time hiking and exploring the outdoors is always so therapeutic for me, and not keeping up with social media is an intentional choice I make on these trips. Social media is great, but taking the time to really "retreat" from the hustle & bustle of the online world is refreshing and rewarding. It's something I just need to do every once in a while.

Oh, and the parks were stunning. The desert holds an indescribable beauty filled with glorious colours and sights. I'd go back tomorrow if I could. 🌡#findyourpark

^what's on the menu for second lunch^ β€’ cucumber sandwiches because it's finally spring (🌷!!!!) + grapefruitπŸ’• this was almost fully raw ~ cucumbers, sprouts, spinach BUT i used JustMayoβ„’ #soclose This would also have been s'good with guacamole and/or on toast and/or with kale instead etc etc 😊 been watching the great British baking show lately it's so funny (and addictive) so cheerio, it's #hashtagtime (so lame ugh)

β€œOne Dish Wonder”
Italian Chicken & Veggies.
It’s simply so easy and delicious!
Ingredients:
1 Pound of Skinless Boneless Chicken Breast Tenders, diced into chunks
1 Container of Cherry Tomatoes
1 Pack of Asparagus, diced into 1 inch pieces
1 Container of Sliced Crimini or Baby Bella mushrooms
4 Cloves of Garlic, minced/crushed
1/2 Onion, diced
Olive Oil, to be used sparingly
Italian Seasoning – I use Mrs. Dash Italian herb all purpose seasoning. (This is a salt-free option)

Instructions:

Pre-heat oven to 400 degrees
Assemble a baking dish with tomatoes, mushrooms, onions, asparagus, and chicken (see pic). Sprinkle minced garlic over the entire spread of food Drizzle olive oil over the veggies and add seasoning to the entire dish
Bake for 25 minutes – until chicken is done and juice run clear and the tomatoes begin to burst Mix together and cook for 5 more minutes to get all of the flavors to combine.

There are many options of how to enjoy this dish: -Serve on it’s own as it’s a great one dish wonder – protein and veggies
-Serve on top of pasta -Serve on top of brown rice
-Serve on top of mashed potatoes (I know, but keep the portions small)

This is also a great option for your weekly meal prep – place into tupperware containers for grab and go lunches or dinners that are healthy, tasty, and easy to enjoy!

Self made cold brew batch of black gold. I just poured a nice amount of room temp water over it and put it in the fridge. Now on its 2nd day steeping and still tastes great. Looks even darker today and is more potent.

I made it from a bag that I got at the Natural Products Expo last year I think (or maybe even 2 years back!) Still was just fine, in taste and potency.

Super Potent caffeine wise (which cold brew is anyway) and Yummy. No need for sweetener. Not bitter. I had it with a little rice milk. Enjoyed some straight as well. Today I added some more water to see if it will keep going. Stay tuned.... Really ready for my workout now!!! Vegan Power, Baby!!!
