Another bowl filled with favourites and lots of plant based goodness for my lunch today, it may not be fries on this #fryday but potatoes nonetheless 😍😍 also note the turermic hummus I made! Turmeric has anti inflammatory effects as well as being an antioxidant, however there is actually very little curcumin (which has those positive benefits) in turmeric and it's not absorbed so well, So best eaten with black pepper which increases the absorption of curcumin.... but it gives food a nice yellow colour 👌👌

Bom dia queridos! 💚🌸🌱 Esta é uma ideia legal para uma refeição vegana super saudável e funcional: refogado de feijão azuki germinado, sorgo e verduras, acompanhado de salada verde. Um prato rico em proteína vegetal, micronutrientes e fibra, e sem carboidratos refinados. Tenho certeza que vocês vão adorar!
Ingredientes:
1/2 x. de sorgo já cozido na água (se cozinha igual ao arroz integral ou quinoa)
1/2 x. de brócolis ao vapor
1/2 x. de pimentão colorido picado, sem sementes
1 x. de feijão azuki germinado (usei o que tinha no congelador, #germinadosvegannutri)
1 dente de alho picado
1 c. chá de óleo de coco extravirgem
1/2 x. de ervilhas frescas, congeladas
Refoguei o alho no óleo de coco por 1-2 minutos. Acrescentei o germinado, o pimentão e as ervilhas, e refoguei por mais 5 minutos. Por último coloquei o sorgo e o brócolis, e misturei. Temperei com sal e pimenta. Para complementar, acrescentei um molhinho de castanhas-de-caju:
1/2 x. de castanhas-de-caju naturais ou torradas sem sal (deixei de molho em água quente por 10 minutos, descartei a água)
Água suficiente para bater
Sal e limão a gosto
Bati tudo no liquidificador até obter um creme.

What can I say, friends? 🤷🏻‍♀️ Intuitively, I ate a lot of “healthy” foods - a lot as in, waayyy more than enough - & I would also like to add that “feeling full” is very, very relative as I always still had room for dessert (& still do). 😋 You can definitely over eat so-called clean foods just as easily as you can anything else. I know because I did & my physique reflected that. Vegan in both pictures! 👩🏻‍🌾👩🏻‍🌾 However, the girl on the left didn’t understand why she wasn’t leaner as she worked out 2x as much as the girl on the right & everyone told her vegans can’t gain weight. 🤔 My diet really wasn’t bad. My weight at the time (150lb) was still in a healthy range (I’m 5’7) but I wasn’t following nutrition guidelines specific to my goals other than “eat healthy” & of course, vegan. I laughed at IIFYM just like a lot of clean eaters when it first came out, but then I listened to the real reasons why it was so effective & couldn’t deny that it made pretty good sense. 📊 I also knew that I could make whatever food choices I wanted. I didn’t have to eat junk if I didn’t want to. It was all about allowing myself a little flexibility & basic math. (Don’t let that intimidate you. I flunked math my senior year & my geometry teacher was nice enough to give me a D on my last report card so I could graduate. Trust me, if I can do this, you can do it too). 😉 So I made it work for me on a vegan diet. #flexibledieting & tracking my macros so I knew exactly what I was consuming & pin point what was & was not working for me changed the game! A couple years of maintaining 15lb less later, I’m where I want to be & eating the food I like all within a balance that makes sense for my lifestyle. 💁🏻 I want the same for you!! I live by this quote. Every choice I make, I make consciously. If I want to indulge in sugar or alcohol, I know I am making a compromise. I don’t kid myself. This last week I have definitely done just that with relatives visiting, and it’s been interesting to see how my body responds! Hasn’t been too bad, but that just makes me want to treat it even better. Having a slow weekend with lots of good cleansing food & prepping for the week ahead. This is my standard: washed greens (from the garden! So proud!), roast cruciferous veg + sweet potato + zucchini, cooked brown rice & an oil-free herb & Dijon salad dressing. Bliss balls leftover from last week, always handy to have. And I had a papaya that needed eating too so pre-chopping it makes it an easy go-to snack or addition to brekky 👌🙌🙏

Today was the last day of my magical experience at the Raw & Plant-Food Chef & Integral Wellbeing Leader Training. Empowerment. Inspiration. Truth. Awareness. Gratitude. Friendship. Joy. Love. Oneness. That's how I can describe the last 6 days.
Today we created our own dishes and here's a selection of just some of them. We had pumpkin quesadillas, courgette koftas, living sushi, raw pizza with pine nut chips, tomato consommé soup, lots of desserts (but no photos as we started our degustation from desserts today and they disappeared immediately 💕 )
But FOOD is so much more than just what’s on our plates. Can't wait to start creating ethereal deliciousness for the body, soul and mind.

However, this ADE overnight Oats are your best bet for feeling awake and energized.! Prepare when coming home at night: 🌱✌🏻
• Vegan overnight oats --> organic oats, coconut milk, cranberries/raisins, hemp seed, flex seed, goji berries, cinnamon
Simple combine all the ingredients and let set overnight. --------------------------🌼 • Finish the overnight oats the next morning --> Walnuts, hazelnuts, almonds, coconut, banana and blueberries #veganfitjourney .
