Uni, Sea Urchin, Oursin, Riccio di mare, うに, 雲丹. Hokkaido Murasaki Uni. The roe is a culinary delicacy (珍味、chinmi); exotic; acquired taste; and considered to be an aphrodisiac by some. Bringing the briny taste of the sea (海水の塩辛い味, 磯の香り); rich; somewhat sweet (甘い); delicious (美味); and with a creamy soft texture. A recent addition to the sushi repertoire and technically not Edomae (江戸前). Urchins are small, spiny, globular sea animals. The name "urchin" is an old word for hedgehog, which sea urchins resemble.
