EYE FILLET 🥩 what better way to spend this cold night than with the hubby cooking eye fillet on the BBQ 😝 I marinated it in EVOO and rosemary, letting it sit for at least an hour. I sautéed some asparagus and roasted potatoes 🥔 until they were golden and crispy 👌🏼Aim to include red meat at least 2 times a week, roughly the size of your palm ✋🏼. Also, don’t forget to eat Vitamin C afterwards to help absorb the iron - examples include oranges 🍊, mandarins or lemons 🍋. Shhhhh 🤫... the kids don't know that they just enjoyed a pasta sauce with hidden goodies.
One of the things I hear from so many parents is that their child just won't eat veggies or legumes. It can be stressful for parents as we want to be able to fill their bodies with a variety of nutrients.
So today l did a little experiment by blitzing together lentils (I used canned), carrot, zucchini, onion and garlic. Pop in a hot pan with a little oil, cook for a couple of minutes then add the tomato puree with some Italian herbs, bay leaves, and a little ground coriander. Simmer till it thickens. Season. *Tip: if sauce is a little acidic- add a pinch of bicarb soda which helps to neutralize the acid (Don't add sugar!). When ready, top on your favorite pasta with a little parmesan.

How gorgeous are these colours - nothing artificial here!!!! If you’re wondering what these gems are, well they aren’t rhubarb (thank you @lifeonwallace 😘) or golden celery sticks! They’re in fact the stems from the rainbow silverbeet I picked up from the Farmers Markets last weekend 🌈
If you missed my last post, the stems are a bit thicker and tougher than your regular silverbeet so just remove the stems from the leaves, chop them up smaller like in the pic and either sautée, stir fry or simply steam them. No food wastage here!

Any of your favourite veggies sautéed with a lot of @corrigansfarm kale. Add a little garlic, soy sauce and chilli and a microwave pack of brown rice 👌

Rainbow greens 🌈
Picked up this delicious rainbow silverbeet from the farmers market on the weekend.
If you haven’t seen rainbow silverbeet before, they have pink and yellow stems.

So how do they compare to regular silverbeet?
1. Taste and texture - very similar although the stems are a bit thicker and tougher so I usually remove the stems, chop them up smaller and add them to the cooking process. No food wastage here!

2. Nutritional profile - very similar to regular silverbeet packed with fibre, vitamins A, C, E and K, iron and antioxidants.

3. How to use - Not only are they nourishing, they look so pretty adding colour to a variety of dishes from salads, stir fries, sautéed, soups, pasta and rice dishes.

It’s fine to add dried fruit, but try and find cereals that don’t have added fruit. That way you can control the quantity of either dried or fresh fruit you add! Guacamole (gwak-ah-MO-lee) is a Mexican dip made from avocados. The trick to making great #guacamole is good ripe avocados. It’s yummy on everything! Try it on tacos, omelets, salads or with veggies like cucumbers, carrots and bell peppers.

INGREDIENTS
2 ripe avocados
1⁄2 cup diced tomato (from fresh or canned, drained)
1 small onion, chopped
1 heaping tablespoon fresh cilantro leaves, minced into little pieces
1/2 fresh lime, squeezed
Hot sauce (if you like)
Pinch of salt

INSTRUCTIONS
Wash your hands with soap and water, then gather all your kitchen gear and ingredients and put them on a clean counter.

With the help of your adult, slice each avocado in half. Remove the pit and scoop out the insides. Put the avocado in a bowl and using a fork, mash it until it is still chunky, not smooth.

Add the diced tomato, chopped onion and minced cilantro leaves. Squeeze the lime and add the juice.

Stir it all together, but not too much. Add hot sauce, if you like.
Move the guacamole to a serving bowl and try it with slices of cucumber, radishes, carrots or bell peppers.

Note: ​Put the avocado pits in the guacamole to prevent it from turning brown from the air. Cover tightly with plastic wrap and refrigerate no more than four hours.

A favourite time in my cycle is the follecular phase! My mood is dynamic, I feel active with lots of energy and it’s the best time in my cycle to be creative and learn. I love asking myself what do I want more of in my life? To match my mood and energy to feasts in this phase I love to eat fresh, vibrant food including pickled veggies to support a healthy gut. I went to my local farmers market yesterday and bought fresh organic vegetables and lots of pickled goodness. Lunch today included pickled mushroom, pickled chilli carrot, celery, olives, cabbage roll with brown rice, cucumber, boiled eggs, homemade beetroot dip, a bed of rocket and dressed with olive oil and apple cider vinegar.
