Have you ever had one of those days where you just wanted to throw in the towel? Give up? Melt into the furniture? Okay, okay, I'm sure you understand what I'm getting at by now. Today was one of those days where I was on an emotional roller coaster with the news of a loved one's diagnosis of cancer. No one deserves this. I'm not in a locale where I can be of much help, but I will do my best to be supportive through texts and phone calls as needed. I'm not advocating emotional eating but I'm also not going to pretend I'm perfect, either. All I have to say is thank you for @my_montana_kitchen_thm's recipe for Holiday Praline No-Bake Cookies! Anyway, it is a very easy to follow recipe with only 7 ingredients! If you do check out her recipe you may notice that my version of her delicious cookies turned out quite a bit darker than hers. This is not by accident. I toasted the unsweetened shredded coconut on medium-low to medium heat in a dry skillet and then toasted the pecans in 2 tablespoons (maybe more 🙊) of butter in the same skillet/same amount of heat. I did this before starting the praline sauce to simmer. Another thing I did differently was instead of xylitol I used @lakantosweetener monk fruit sweetener "golden". It's a fantastic 1:1 brown sugar substitute - I used 90 grams of it. So, the praline sauce had a more caramel look than had I used xylitol. Needless to say they turned out perfect and yours should too even if you do not stray from her recipe!
The shake is 1/2 of "Coach Keto Jack's Fat Shake" by @keto_coach_jack. It was a perfect pairing with the cookies and believe me I'm much too full to overeat the junk! The macros for what you see pictured all totaled together are 3 grams NET carbs, 69 grams fat, and 9 grams protein. Not only am I NOT having a #fibroflare from this, I also feel better emotionally - (is it the fatty acids calming my neurons? Is it knowing I still was true to my nutritional goals? Is it both?) - but it tastes absolutely fabulous, as well!
