It was just me at home tonight and I was too hungry to wait for take out. Ended up raiding my pantry and found a jar of green olives, a couple tomatoes and a half empty #glutenfree spaghetti bag. Low and behold I think this is my #top5 pasta of all time!
1/4 pound of spaghetti of choice
1/4 cup green olives (or more to your liking)
1/2 cup chopped tomatoes
2tbs GF breadcrumbs
1 garlic clove
1/4 tsp red pepper flakes
Boil pasta to package instructions. Heat pan on medium heat with 2 turns of olive oil. Lightly brown chopped garlic. Add chopped olives, tomatoes, red pepper flakes and 1/4 cup water. Bring to low simmer till tomatoes soften and create sauce, approx 5-8mins . Add salt to taste (dependent on saltiness of your olives). Meanwhile in a separate pan melt 1tbs of butter or olive oil. Add 2tbs of breadcrumbs and brown. Turn off sauce heat and fold in strained pasta and parsley. Top with breadcrumbs and enjoy!
