People often ask me, do you really like eating salads? And, to which I reply, yes, YES I do!! I could seriously stare at the beautiful colours in this salad all day long. I know it’s the first full day of fall and all, but I’m hanging on to my summer salads for as long as I can! A rainbow definitely went into this salad - spinach, kale, carrots, red and yellow peppers, purple cabbage, radishes, chicken and pumpkin seeds, all topped with an amazing lemon tahini dressing.

1/4 cup tahini
2 tbsp lemon juice
1 tbsp apple cider vinegar
2 cloves garlic (minced)
1 tbsp maple syrup
Salt and pepper to taste
1/4 water to thin
Whisk all ingredients together in a small bowl (makes about 1 cup) and store in the fridge or use on your salad right away. Enjoy!
