We had a pancake Saturday last week.
I never seem to have pancakes on #pancakeTuesday. It's usually a day or two later or a day or two ahead. Very much like @paleotritious_healthcoach I listen to my taste buds, not the calendar. Saying that, the calendar reminds me every year, that there is such wonderful food like pancakes.
While most of the food I eat is raw, I think pancakes are a great treat and depending how you make them, they can be a great power food for your body, whether you work out, are active outdoors or just have a really busy day in the office.
I make mine vegan and gluten free and this year I got inspired by my interview with the above mentioned lady and switched from using buckwheat flakes to quinoa. It worked a treat.
We had them filled with hazelnut cream (hazelnuts, coconut oil, vegan coconut yoghurt, carob, pinch of salt), almond butter, Yacon syrup and topped with chopped nuts.
Next time I will go for some ginger and lemon version, this was a bit too sweet for me. Then again, my taste buds are completely turned to sour foods thanks to eating fermented foods, and I'm a ginger and lemon addict.
