We had this dish so many times in Tuscany and you rarely see it here in the US. The Italian word Pappa translates to mush, or baby food. It's like a porridge consistancy packed with tons of summer flavor. The Italians created this dish to extend the ingredients they already have in the kitchen from over ripe tomatoes to leftover loaves of bread. It's not only delicious, but very practical!
