🐷 4 tbsp extra virgin olive oil
🐷 3 tbsp grainy mustard
🐷 3 cloves of garlic, smashed
🐷 1 tsp fresh chopped sage
🐷 1 tsp fresh chopped thyme
🐷 1 tsp fresh chopped rosemary
🐷 1 tsp sea salt
🐷 1 tsp black pepper
🐷 2 tbsp raw honey (omit for Shred10 or @crossfitfree nutrition challenge)

Summer squash soup! Eat it hot or cold. Just one of the recipes I’m cooking up today for the week ahead. It’s my batching day this weekend instead of Sunday afternoon. Veggies chopped and bagged for use in salads and stir fry.

Life changing bread!! ❀️ you guys, this stuff is amazing. Literally THE best gluten free morning toast EVER!! πŸ€—

I’m putting the basic recipe below but here is how I β€œtweaked it”: I added 3 dates instead of the maple syrup, I also added 1 TBS cinnamon and raisins. I put everything except the raisins in my food processor and pulsed until it was a large crumb consistency.
1 cup (135 grams) sunflower seed kernels (not in the shell)
1/2 cup (90 grams) flax seeds
1/2 cup (65 grams) hazelnuts or almonds
1 1/2 cups (145 grams) rolled oats (if making gluten-free, make sure to get certified gluten-free oats)
2 tablespoons chia seeds
4 tablespoons psyllium seed husks (3 tablespoons if using psyllium husk powder)
1 teaspoon fine grain sea salt (add 1/2 teaspoon if using coarse salt)
1 tablespoon maple syrup (for sugar-free diets, use a pinch of stevia)
3 tablespoons melted coconut oil or ghee
1 1/2 cups (350 milliliters) water

1. In a flexible, silicon loaf pan or a standard loaf pan lined with parchment, combine all dry ingredients, stirring well. Whisk maple syrup, oil, and water together in a measuring cup. Add this to the dry ingredients and mix very well until everything is completely soaked and dough becomes very thick (if the dough is too thick to stir, add one or two teaspoons of water until the dough is manageable). Smooth out the top with the back of a spoon. Let sit out on the counter for at least 2 hours, or all day or overnight. To ensure the dough is ready, it should retain its shape even when you pull the sides of the loaf pan away from it or lift the parchment.
2. Preheat oven to 350Β° F / 175Β° C.
3. Place loaf pan in the oven on the middle rack, and bake for 20 minutes. Remove bread from loaf pan, place it upside down directly on the rack and bake for another 30 to 40 minutes. Bread is done when it sounds hollow when tapped. Let cool completely before slicing.
4. Store bread in a tightly sealed container for up to five day

The timing couldn't be more perfect! My nesting and spring cleaning are are hitting at the same time and I am finding alllll the things to clean 😍
How much thought and care though do we put in every year towards cleaning our homes and pretty much everything else in our lives besides our insides πŸ€·πŸ»β€β™€οΈπŸ€¦πŸ»β€β™€οΈ these last couple weeks in all honesty were not super great for me food wise but I knew the entire time I had the Insurance of over 30 fruits and vegetables every day!
Beginning of this year I was able to participate in a Shred 10 group and it was amazing!! The accountability, new friends, lifestyle changes, were all soo good!
It was so fun to take 10 days and simply focus on how to take care of my body with nutrition and self care! Which I know every mama needs to take that time to focus on that so they can in turn care for their family!
You can do anything for 10 days especially with a great support system πŸ™‚
