Igado for lunch at the company motorpool.

Igado is an Ilocano dish made from pork liver, pork tenderloin and other pig innards cooked in vinegar and patis or sou sauce mix. I add extra bell peppers and cook it thoroughly to add more flavor.

I've been having a blast cooking. This is my take on SBK's Pork Sisig. Chopped pork barbecue, bagnet, lechon and pork brain in one mixture. I also threw in an egg for good measure (and because it's sisig). No mayonnaise because we have class.

Pancit Maciang is a unique dish served at Panciteria Maciang in San Pedro, Laguna. The use of banana ketchup (Yes! Banana Ketchup) and the addition of sunny side up egg gives a distinct sweet-savory flavor to this simple yet awesome dish.

This is the (bastardized) version we used to serve at Saint Bede's Kitchen. We added toasted garlic, caramelized onion, green onions, kinchay and more sahog so it would look like P120.00. Hahaha!

Traditional Mechado recipe using spanish technique uses pork back fat "threaded" into rolled thick cuts of cheap beef to make them less dry, hence "mecha". The rolled meat is then marinated in aromatics, seared, stewed yada yada yada.
This is not it.

This is the Filipino style where not so cheap cuts of beef are marinated bistek-style then stewed ala caldereta, with lots of super ripe tomatoes, garlic and sweet paprika.

Thanks to @bojmenyek Bojji Catama for the recipe. This is the only recipe of Mechado that I'll ever cook. Ever!

In 2008, my friends, @bojmenyek and @apisoforyourthoughts, and I opened a small restaurant that served our take on traditional and modern Filipino comfort food. We named the restaurant St. Bede's Kitchen after the patron saint of our high school Alma Mater where the three of us met. Unfortunately, SBK closed down but when I need a dose of nostalgia pop, I cook the dishes we served at back then, like this one and my last two posts.

This was SBK's version of Tokwa't Baboy. Bagnet, tokwa and soy sauce mix. Bagnet-on-anything wasn't as popular before as it is now.

Eating healthy has been hard especially because most of the veggie dishes I know have bagoong isda in it.
Poquipoqui (pokipoki) is an Ilocano grilled eggplant dish with sauteed onions, garlic tomatoes, eggs and bagoong isda.

My father used to cook this for breakfast. Best with tocino or longganisa and garlic rice.
