So I have a really huge craving for a BLT and decided I would do anything it takes to make a plant-based, preservative and yucky ingredient free, gluten free version of this amazing sandwhich. Step 1 - make my own chipotle mayo!!! I don't usually get this excited about making condiments, but I've never made a mayo or even thought of making a mayo before - and its SO easy! Plus, so much better for you than veganaise or other store bought versions because these ingredients are simple and pure 😌😝. Just blend 1 cup coconut oil or olive oil ( I used a coconut oil that doesnt carry the coconut taste and is pretty neutral), 1/2 cup unsweetened plant-based milk of choice ( I used almond - if you want to go the extra health mile you can make your own nut milk and usw that), 2 Tbsp of organic Apple Cider Vinegar, organic Chipotle, and Himilayan Pink Salt or Sea Salt to taste! That. Is. It. And it lasts for about two weeks in the fridge ☺️.
