Brinjal Dal (Eggplant Dal)
Ingredients

Toor Dal - 100 ml
Onion - 2 nos chopped
Tomato - 2 nos chopped
Green chili - 2 nos slit
Soaked Tamarind
Brinjal - 1/4 kg
Turmeric powder - 1/2 tsp
Chili powder - 2 tsp
Water
Rock Salt - 1 tsp

For Tempering
Oil - 1 Tbsp
Mustard seeds - 1/4 tsp
Urad dal - 1/4 tsp
Cumin seeds - 1/4 tsp
Red chili - 2 nos
Pounded Garlic
Asafoetida powder - 1/4 tsp
Few Curry leaves
For Garnish
Drizzle Ghee
Few chopped Coriander leaves

Method:
1. In a pressure cooker add toor dal, onion, tomato, green chili, soaked tamarind, brinjal, turmeric powder, chili powder, water and rock salt.
2. Pressure cook it for 3 to 4 whistles.
3. Brinjal and dal is cooked now next temper it.
4. In a wide pan add oil, mustard seeds, urad dal, cumin seeds and red chili.
5. Once the mustard seeds starts splattering add pounded garlic and asafoetida powder.
6. Turn off the stove and add curry leaves.
7. Transfer the cooked brinjal dal mixture and mix well.
8. Check for seasoning and add few chopped coriander leaves.
9. Garnish it with ghee and chopped coriander leaves.
10. Serve hot it with chapati or rice.

Water has been the topic today in my challenge group and the girls were talking about how to make it better. One suggestion was making ice cubes with fruit infusions. This is a great way to help flavour your water and keep it cold as well.
WHAT TO DO:
FRUITS //VEGETABLES:
When using fruit/vegetables, simply juice, chop, dice, OR puree in a high speed blender (Vitamix).
Pour juice//puree into an ice cube tray and freeze.
Add the Infused Ice Cubes into your water and enjoy the subtle release of flavors from the ice cubes!

HERBS //SPICES //OTHER:
Chop, finely โ€œbruiseโ€ the herb leaves. Bruising is simply a breaking down the herb to release the essential oils.
Place chopped herbs//spices into an ice cube tray and cover with filtered water. Freeze.
Add the Infused Ice Cubes into your water and enjoy the subtle release of flavors from the ice cubes!

Do you know how much you are really supposed to drink? Take your body weight divide by 2. That gives you how many ounces you need to drink. Take that and divide by 8 and that's how many cups! Some may be more the old adage of 8-10 cups.

Dive into the weekend with our creamy, spicy #Bellisaris Blue Cheese & Honey Sriracha Chicken Dip.
Ingredients:
1 pound thin boneless skinless chicken breasts
ยผ cup chicken broth
2 - 4 Tbsp. Sriracha sauce
2 Tbsp. Bellisariโ€™s Blue Cheese Honey & Shallot Spread
1 tsp. hot sauce (optional - more or less depending on preferred spice level)
8 oz. cream cheese, softened
1 cup shredded cheese (I used white cheddar)
Directions:
Place chicken in slow cooker. Whisk broth, Sriracha, honey and optional hot sauce. Pour mixture over chicken. Cover and cook on high for 2-3 hours or low for 4-6.
Shred fully cooked chicken. Add softened cream cheese, Bellisariโ€™s Blue Cheese, Honey & Shallot Spread and cheese. Stir until smooth. Return cover and let heat on high for an additional 20-30 minutes. Serve with tortilla chips or veggies.
(I cooked the chicken on high for 2.5 hours in my 2 quart slow cooker with another 20 minutes on high after cream cheese and cheese were added.)

Season your chicken breast as you like it and pan sear it. Mix the juices into olive oil and aceto dressing and pour over the veggies. Toss over some cottage cheese and you're done! ๐Ÿฅ—๐Ÿฅ—
