After my ice cream investigation earlier this week, I've been getting a lot of questions about frozen yogurt. The truth is that the majority of that soft-serve frozen yogurt sold in shops across the country like Yogurtland, TCBY and Pinkberry is processed to the HILT and full of shady ingredients! If you love to eat frozen sweet treats this time of year, I've got a much better option for you here!
Food Babe's Homemade Coconut Milk Ice Cream (3 Flavors)
1 can of full fat coconut milk (13.5 ounces)
3 frozen bananas or ½ cup coconut palm sugar
pinch of sea salt
Almond Pistachio Flavor: 1 and ½ tsp almond extract,1 vanilla bean seeded or 1 tsp vanilla extract,1/2 cup toasted and chopped almonds and pistachios
Mint Chocolate Chip Flavor: 2 tsp peppermint extract, ⅓ cup raw cacao nibs or chocolate chips of your choice
Cookies & Cream Flavor: 1 tbsp vanilla extract , 10 cacao einkorn cookies broken into pieces or cookie of your choice
Combine base ingredients in blender and blend until smooth.
Add liquid flavorings (extracts) into blender and blend again.
Pour mixture into ice cream machine and turn on.
Mix for at least 20 mins or until ice cream is formed.
Stir in dry ingredients - i.e. nuts, cookies, etc and serve.
Best served immediately, if stored in freezer, place back into ice cream maker to make smooth and creamy again.
