Spinach Pie 💜 I used to make this back in my vegetarian days with cheese and eggs. Too easy to veganise! 500g frozen spinach (thawed) mixed up with 3/4 tub Tofutti cream cheese, 2 grated carrots, 1 cooked onion, 200g biocheese and about 50g each of Oliana feta and Noshing Naturally feta. Line a greased cake tin with filo pastry and fill with mixture. Add some filo to the top, milk-wash it and pop in the oven at 150C for 45-60 minutes. You can sub any cheese you like, of course!
