#TBT: That Fateful First Year.
A look back at 2015 and the one time I was in @sait's @theweal, and got the full photoshoot treatment courtesy of @mikaela.mackenzie.
It had been a tumultuous first year, getting used to the #BOH life, when I arrived for my first years' technical training. So much I learned that year, thanks in large to Chefs @mikael.volke & @rosewarden -- and as always, armed with knives from my friends @knifewear. (The knife in this picture I believe it was Kasumi who helped me pick it out. Arigatou, Kasumi-san.)
Now fast forward to 2018, and I am on the cusp of becoming the first @MasterchefCDA Top 26 to clinch their Red Seal Endorsement (RSE).
(I don't think anyone else in the past four seasons have followed that path, but if you are, holla at me!)
I've been through some crazy times, and I know I have many more mountains to climb; but once I pass my #ExamGauntlet in a couple weeks' time, I know I will have conquered the first mountain on my road to Culinary Valhalla.
But still, I can look back and still see incredible progress. Not only have my plates gotten better, but my techniques have evolved too. The whole math and management thing will come in due time, but hey.
How far I've come, and how far I can still go!

I know I'm on my way. I may have taken the long way around, but I know my time will come.
