I’ve been fighting off this cold I got while traveling, but it finally bested me! 😒 Out today with a cough of sorts 🤧 and nothing helps me more than something spicy to help decongest! I adapted this honey sriracha tofu recipe from @misspickledplum and added mushrooms and a pack of ramen noodles. Instead of the sodium packet, I cooked the noodles in some low-sodium veggie broth for extra flavor, although the flavor from the tofu was plenty!!

I have done cauliflower rice before so I decided to mix it up a bit by trying to replicate another favorite vegetable fried rice. And I must say it is amazing!!! The process isn’t to much as long as you have a food processor to help chop the cauliflower. Saves a lot of time!!👍👍👍 Using cauliflower to substitute rice is a great way to be healthier! And if cooked with love and patience, the texture will become that of cooked white rice. Ingredients: frozen bag of cauliflower rice, one bag frozen veggies,chopped onions, minced garlic, 1 egg, soy sauce, shrimp, it also called for scallions but I didn't have any.
