I’ve been in a funk lately and I’m really trying hard to push past it and keep moving forward. I get asked all the time how I stay motivated, and honestly, I struggle with that too sometimes. Posting my goals and workouts on here helps keep me accountable — so that’s going to be my start this week. 🙋🏼‍♀️🔥 I also prepped some delicious food for the week and I’m ready to crush it, starting with a 6AM spin tomorrow.

SUPER EASY, Sweet spinach muffins — high in iron & yummy in taste 😍🌿 Want the recipe? Keep reading!

I haven’t (yet) heard back about my blood test results from last week, which could mean that my tests didn’t show any abnormal results, or perhaps they haven’t processed them yet. In the past I’ve been 99% sure I’ve had low iron, yet my levels come out normal. So because I know I don’t eat a very high iron diet, I’m going to amp up some of my meals over the next while to be higher in iron to see if it helps with my fatigue. These muffins are SO SIMPLE, and packed with spinach and natural sweeteners. Yum!

Makes ~18 Muffins

DRY INGREDIENTS:
✖️ 2 cups flour
✖️ 1 TBSP cinnamon
✖️ 2 tsp baking powder
✖️ 1/4 tsp salt
✖️ 1/2 tsp baking soda

WET INGREDIENTS:
✖️ 1-2 bananas
✖️ 1 egg
✖️ 1/2 cup butter
✖️ 1-2 generous handfuls of spinach
✖️ 1 tsp vanilla
✖️ 3/4 cup milk
✖️ 1/2 cup honey

1. Mix all the DRY ingredients in a large mixing bowl. Set aside
2. In a blender, blend all of the WET ingredients together. TIP: Melt the butter in the microwave before adding so it blends smoothly 😉
3. Make a well (little hole) in the middle of the DRY ingredients. Pour the WET ingredients into the DRY in the well.
4. Mix to combine. Do not over mix! Just until all ingredients are gently combined.
5. Bake at 350° for 18-20 minutes, or until a toothpick inserted comes out clean, or the tops of the muffins bounce back when lightly touched.
5. Cool completely before enjoying! 🤗🌿

Cheers to the freakin’ weekend! 🍹☀️ The sun is shining and Kyle and I spent the day shopping, playing with Echo & hanging out outside. I’m not a huge drinker, but in the summer when I’m wanting an adult bevy at home I know what my new go-to drink will be!

The @sociallitevodka drinks are under 100 calories, and make sparkling water a little more naughty 😈 My new favourite is the Spiked Iced Tea — compared to other spiked iced teas, this one is just the right amount of sweet and tart. I usually find other mixed drinks in cans are too strong or too sweet, and I never grab them. The reason I like these is because they are made with no sugar and no sweetener - it literally tastes like sparkling water with a hint of tea and vodka! 🍋 swipe to see our photos — I think Echo is a fan too! 🐶👅

Carrot Noodle Alfredo with Turkey Meatballs.

This seems like such a random throw together, but I promise it was delicious! The carrot noodles are just spiralized carrots from the frozen section at Trader Joe’s, and cooked as directed on the box. .

Alfredo Sauce:
I started with a roux base of melted grass-fed butter and a mixture of half flour, half tapioca starch. About 2 Tbsp of each flour, and 4 Tbsp of butter. (I am not a food blogger, nor do I follow recipes, so bare with me that these are approximate estimates). .

To make a thickened sauce, after the roux is mixed, I added in about 1 heaping Tbsp of chopped garlic and sautéed that for just a minute. Then add in unsweetened almond milk and organic vegetable broth, about 1/4c of each. Add in slowly, and whisk often to make sure proper thickening occurs. Spices included salt, lots of pepper, onion powder, and a pinch of chili powder. Before I was ready to serve, I threw in a handful of an Italian blend of shredded cheeses to really thicken. .

Turkey Meatballs: •1 pound ground turkey burger
•1/2 finely chopped small white onion •1 egg
•1/3-1/2 cup bread crumbs (can use gluten free or almond meal)
•3-4 dashes of coconut aminos
•Italian seasoning
•salt • pepper
•garlic powder

Preheat over to 350, and preheat a cast iron pan on the stove top with a drizzle of olive oil.

Mix all the ingredients together and form medium sized meatballs to go straight into the cast iron skillet. Brown on each side for 3-4 minutes, then place skillet in the over to finish cooking, about 15 minutes. .

When everything is ready, throw the carrot noodles, sauces, and meatballs together, and top with fresh basil. Voila!

This morning I did not want to get out of bed. My alarm went off, and I SO contemplated paying the late cancellation fee and not showing up to spin.. but then I remembered it was Annette’s FIRST ride back since her car accident early in 2018 and I couldn’t miss this class and seeing her smiling face back in the saddle! ❤️🤗

I’m SO proud of her for working hard to overcome the pain she’s been experiencing from her accident and getting her body back to where it was. It’s been a long road for her, and I know there have been struggles, but seeing her smile on the bike and the fire lit within her again was the reason I got my butt out of bed. 🔥 (Swipe to see THE CUTEST lil thing you ever did see) .. She has finally been cleared for spin again YAY!! And now I’m feeling all emotional like my little baby took her first steps 😭❤️ I know firsthand how much an injury can debilitate you and fck with your emotions. Annette’s determination and grit to get better has been a constant reminder to me that if you fight for it hard enough, you’ll get there. SO PROUD OF YOU LIL CINNAMON BUN 😘⚡️💃🏼

Feeling so thankful that tomorrow is FRI-YAY! 🎉 After am exhausting week and some appointments to check on my exhaustion, I am so ready to relax and enjoy the weekend!

Today I had my second Fascial Stretch Therapy (FST) treatment, but this time with @philosophy_shpk! I am SO happy that @hughespt_yyc recommended her to me so I could continue my FST treatment here in Edmonton. I’m excited to continue to work on gaining more mobility and working with her to get my whole body in tip top shape. FST helps me to stretch deeper, align my body, and get my muscles moving and activating properly, and I love that it’s a full body treatment because we are finding and noticing areas I’ve neglected on my body for a long time. This weekend I relished in the fact that I made no real plans, and took the much needed time that I’ve neglected for self-care and relaxation 💗

I’m a busy bee 🐝 (and I secretly LOVE when my schedule is jam packed and I’m connecting with so many people and filling my cup to the brim). 💫 It brings me joy and energizes me, but also drains me out so quickly. So if I don’t take the time I need to chill out, I can easily find myself burning out. It’s a delicate balance between living a full life and knowing when to take a much needed, serious pause for myself. I don’t like to slow down when there’s so many amazing things to do and people to connect with! My self-care activity of choice is working out, which sometimes I need to step back from in order to reset my entire body and just relax. And I find that challenging to do at times when my workouts are something I enjoy so much !

This weekend, I knew I needed to make no plans. No scheduled workouts. No hanging out with friends. I forced myself to sleep until 1pm on Saturday, then I went shopping with my momma and just cherished some time spent together. I napped when I got home (clearly needing ALL the sleep 😴). I watched Netflix for hours. It was glorious! Yesterday I scheduled my last minute appointment at Buff, and then watched almost all of All Stars 3 of RuPaul’s Drag Race with my brother. We ate junk food, had puppy cuddles, neglected text messages, and just relaxed. It was SO needed. I ended the night with a nice hot bath and finally got to try out my @lasoaperie products that I won in a giveaway. The perfect end to the perfect weekend. Just had an important conversation with a friend and I want to share it here, too. ❤️Confidence comes from within — and you can rock a sports bra or shorts or funky hair or a bodysuit as long as YOU believe you can.

If you have a body, you can wear a body suit. If you have hair, you can rock funky colours. If you want to workout in a sports bra, then workout in a sports bra. None of this “I so wish I could wear X but ...” excuses anymore. It’s time for you to embrace your #bodypositivity! All bodies are beautiful, and as long as you are wearing clothes that fit you (ie, not tying to wear sizes much too small for you) then you can honestly wear whatever you want! I dare you! 🙌🏼❤️

I still get self-conscious. Yesterday I wore a bodysuit for the first time and thought everyone was looking at me saying “ew why is she wearing that”. My shorts rode up in the inner thighs and bunched because I have thunder thighs and I was crazy self-conscious over that and how the bodysuit fabric clung to my stomach. But honestly, NO ONE WAS EVEN NOTICING! And if they did, who cares. I loved how I felt in it! I felt beautiful and sexy and fierce!

🙃 Here’s something twisted: I’m most comfortable in a sports bra and leggings, and actually feel more self-conscious when I’m wearing a tank over my sports bra. HOW MESSED UP IS THAT. My tummy has a lot of jiggle, and hangs over my waistband sometimes, and I have back rolls and armpit fat and guess what: I feel most comfortable in an outfit that I’ve *created* to be something I feel confident and powerful in. That came from within me. A year ago I would take the tank off before spin and run into that dark room praying no one would see the fat jiggle. What’s crazy is I inspired others — followers and IRL pals at spin — to workout in just their sports bras too because of my confidence #rockthecrop! 😎

Everyone starts somewhere, and you’ll have good and bad body days. But life is too short to worry what others think, in my opinion! Rock the crop top. Or shorts. Or dye your hair a crazy colour. And OWN IT. Because you my dear, are beautiful, and can rock anything your heart desires ❤️

Getting sooo much hate today in my DMs for saying that sometimes I just want to share my story or my struggles without someone trying to “fix” them. 🔧⚙️🤕 I know y’all are just trying to help — and I SO appreciate it — but consider it from my perspective too. It’s my body and my injury and it’s been 16+ years of me dealing with it and trying everything in my power to heal it. Unless you’ve dealt with chronic pain, you’re likely not going to understand the emotional toll it can take on a person and the rollercoaster they are constantly on. 🎢

Sometimes listening, acknowledging that I’m going through something hard, and being empathetic to the situation rather than trying to offer a solution is all a friend needs 🤗 Just some food for thought and something to remember when you’re interacting with anyone — not just in relation to this injury post. Compassionate listening is a a skill I constantly work on, and it’s hard not to to offer up a solution and instead just listen. Sometimes people just want to be heard ❤️😊

Real talk: I wish I could understand my body just a little bit better. Why my injury flares up on certain days and not others, and how to heal it for once and for all. These past two weeks have been impossible for me to navigate, and the frustration of it is starting to get to me.

One day I feel invincible... the next it’s debilitating. I haven’t been sleeping, I had two chiropractor appointments last week and I feel like I need another one this week (I was on a 5 week schedule before!). Why does it feel like I’m going in reverse? I’ve tried so many different treatments and practitioners and I stretch more and workout more (per their recommendations) and I’m drinking more water everyday. On paper I should be healing, so why am I not? 😭

It’s hard for me to maintain a routine for working out when my body has a mind of its own. I do my best to listen to my body but I also am told to keep it moving because that helps it the most. I never know what each day will look like which makes booking classes or trying new things really hard. Its also hard to see all these classes and studios and group workouts that I want to join friends at, and can’t because I know it will strain me even more. I feel like I’m in a constant struggle and it’s emotionally and physically draining. 😔
