This steamed fish with spices (rempah) is simply delicious & healthy...one of the signature dish in Indonesia..#pepes ikan
Steamed rempah fish recipe:
1 whole red snapper, wash & pat dry
2 calamansi or small lime
2 stalks lemongrass,bruised and cut
3 slices galangal
1 tomato, cut wedges
8 whole chili padi (adjust to preference)
2 stalks fresh basils
Salt to taste
1 teaspoon sugar
Banana leaf to wrap
2 red chili, remove seeds
2 cm ginger
3 cm turmeric
1 teaspoon corriander seeds
Make a couple slit on the fish, rub with calamansi juice and salt. Let it marinate for 15 minutes.
Heat 2 tablespoons oil on the pan, add in blended spices, batleafs, galangal & lemongrass. stir fry until fragrant. Add in salt & sugar, stir to combine and correct taste.
Off the heat. Prepare the steamer to boil.
Place the fish on the banana leaf large enough for the whole fish, add in spices on both sides of fish and covered with spices thoroughly. Add in tomato wedges, basil leafs and chili padi. Cover and secure both ends with toothpicks. Place it on a plate and steam for 35 minutes. Served with rice.
