Taco Thursday!
I know tacos are for Tuesday’s usually but this week is all about coming up with fun new strange twists with my limited ingredients. So I guess the twist is I’m eating tacos on a Thursday. Creative, I know! 😂 so I used up the last of my Lavash bread by making these taco shells for discussed tacos. I cut the half sheet I had in half again, folded them like tacos, placed them in a cupcake tin and baked on 350 until they looked crispy. Scroll to the past picture to see what I’m talking about. The beef taco used up almost the rest of my ground beef. It’s a basic taco with taco seasoning, guacamole, salsa, and spinach. The shrimp taco used up the remainder of my shrimp. I cooked it in lemon and lime juice, seasoned with lemon pepper. The sauce is mayonnaise mixed with the same ingredients. This is my first time having shrimp tacos before and I have to say that I am definitely a fan!!! The lavash makes a perfect taco shell, when I bit into it it was crispy like a shell, yet maintained its shape with it crumbling or breaking. Tasted great too! I’ll have to try these as chips some day!
