~ CAULIFLOWER RICE ~
This great low carb alternative to white rice is becoming increasingly popular and is a great way to increase veggies in your diet. .
Using a food processor, process cauliflower florets until very finely chopped.
Heat coconut oil in a large, deep frying pan over medium heat. Add chilli, ginger and garlic. Cook, stirring, for 2 minutes or until chilli has softened and mixture is fragrant. ⠀⠀
Add cauliflower and cook, stirring occasionally for 20 minutes or until tender and light golden. .
Stir in green onions, chives, salt and pepper for extra flavour!
