INGREDIENTS 1 pound beef steak such as flank or sirloin, thinly sliced, lean
1 tablespoon + 1 teaspoon vegetable oil
2 cups broccoli florets. small
1 cup mushrooms sliced
1 teaspoon fresh ginger minced
1 teaspoon garlic minced
¼ cup oyster sauce
¼ cup chicken broth or water low sodium
1 teaspoon honey
2 teaspoons sesame oil toasted
1 teaspoon soy sauce
1 teaspoon cornstarch
salt and pepper to taste
Optional garnishes: 2 tablespoons sliced green onions 1 tablespoon sesame seeds
INSTRUCTIONS

1.Heat 1 teaspoon of oil in a large pan over medium heat. Add the broccoli and mushrooms and cook for approximately 4 minutes or until vegetables are tender.
2.Add the ginger and garlic to the pan and cook for 30 seconds more.
3.Remove the vegetables from the pan; place them on a plate and cover.
4.Wipe the pan clean with a paper towel and turn the heat to high. Add the remaining tablespoon of oil.
5.Season the meat slices with salt and pepper and add them to the pan in a single layer - you may need to do this step in batches. Cook for 3-4 minutes on each side until browned and cooked through.
6.Add the vegetables back to the pan and cook for 2 more minutes or until the vegetables are warmed through.
7.In a bowl whisk together the oyster sauce, chicken broth, honey, sesame oil and soy sauce. In a small bowl mix the cornstarch with a tablespoon of cold water.
8.Pour the oyster sauce mixture over the beef and vegetables; cook for 30 seconds. Add the cornstarch and bring to a boil; cook for 1 more minute or until sauce has just started to thicken.
9.Serve immediately, topped with green onions and sesame seeds if desired.

I don’t emphasize weight loss in my coaching. Weird for a health coach, right?
.
But I don’t want to perpetuate the belief that validation comes from an extremely lean, tight body.
.
A woman I coached was fairly lean for her age and activity level (~24-26% body fat). She wanted to drop more weight.
.
I tweaked her diet to maximize nutrients and improve her sport performance. She felt great and dropped 3 lbs in one month. But she wanted more.
.
We went through her options:
1️⃣ Decrease calories further.
2️⃣ Add more exercise (already spending 2-3 hours/week running).
.
After a lengthy discussion of the pros and cons, she decided she didn’t like either of those options.
.
Her recent physical showed she was in great health.
.
She had more energy.
.
She loved her diet and couldn’t imagine eating less.
.
She had a family and a FT job and didn’t want to spend more time exercising.
.
So, we decided to keep working on a super nutritious diet, and she chose to start a self-acceptance journey (instead of pushing for more weight loss).
.
Health is an outfit that looks different on every body.
.
The best body isn’t one that’s tight and lean. The BEST body is one that is healthy and that doesn’t compromise your quality of life by obsessively exercising or counting calories.
