Rich and delightful low-carb Cream of Mushroom soup 🍲 for those days when your hubby who hates ‘shrooms is away 😆
Cream of Mushroom soup: serves 2 •
•3 cups brown mushrooms sliced to your preferred thickness/liking
•2 TBSPs salted butter
•2 cloves garlic, diced
•1/2 cup chopped white onion
•2 cups soup stock - your choice (I used beef)
•Splash of white wine (optional)
•1/2 cup cream
•1 tsp Cayenne pepper •2 tsp Montreal steak seasoning (can be subbed for salt and pepper)
•1 tsp xanthan gum
Garnish with chopped parsley and fresh shaved Parmesan
To prepare: add Butter to a pot and brown onions and garlic until translucent, about 5 minutes. Add the sliced mushrooms, cayenne and Montreal steak spice, cook onion and mushroom mixture on medium heat until mushrooms are softened.
Add the xanthan gum and broth, stir until combined on medium heat and let simmer, about 5 minutes. Add a splash (or two) of wine. It tastes amazing! Add cream and let simmer again for another 5-10 Minutes. Taste test it. Needs more Montreal steak spice? Add a shake or two 😉 Garnish with chopped parsley, Parmesan and cracked black pepper. Enjoy!
