And we did it! Our first all vegan Thanksgiving dinner! And we went big! Here, we have a gardein roast, with zesty macaroni, the best stuffing I've ever had, asian-inspired green beans, asparagus with a lemon cashew sauce, mashed potatoes, mushroom gravy, corn on the cob, and the obligatory dinner rolls. The best part of it all? Hands down, sharing this good food with loved ones who enjoyed every bite. My heart is happy.
