Meal Prep - Healthy Greek Grilled Chicken Bowl w/chunky tzatziki, cauliflower tabbouleh, babganush, hummus, & kalamata olives. - Saturday: combine raw chicken breasts with olive oil/sunflower oil blend, season with dried oregano, thyme, & basil, garlic & onion powder, and salt. Let it sit in an air tight container overnight. Cook I'm a grilling pan over high with some oil.
For the chunky tzatziki, combine diced cucumber, Greek yogurt, garlic, olive oil, white vinegar, salt, & fresh dill. Mix well and let it sit overnight.
For the grain free tabbouleh, combine cauliflower rice, cucumber, tomato, fresh parsley, fresh mint, scallions, garlic, olive oil, lemon zest, lemon juice, red pepper flakes and salt. Mix well and let it sit overnight.
To assemble: layer tabbouleh, tzatziki, babaganush, Hummus, chicken, olives and finish with fresh cracked black pepper.
