Honey! Where's my super soup? #TheSaturdaySoup today is 'Shorba' - a very basic soup, almost like a broth, that is bulked up slightly with pleasing pasta beads (Orzo). It is made with minimal ingredients and some warming spices that give it an exotic flavour.
Today our Shorba was made with some if the bits that needed using up in the fridge - half a red pepper, spring onions and the last handful of fresh coriander. The pepper and onion was gently fried in oil, a teaspoon of each of the spices(ground coriander, ground ginger, ground cinnamon) added and then 2 pints of vegetable stock, a cup of passata and a tablespoon of tomato puree was added and all brought to a simmer for 15 minutes. The fresh coriander was added and then the soup was blended well. A ladle full of pasta went in with a knob if butter and cooked for another 10 mins before serving. We didn't have any, but chopped fresh mint leaves taste really good when added before serving.
