So. Many. Endings just occurred in my life. Too many. My semester ending. Having to say goodbye to professors that I formed really meaningful relationships with. My internship ending. Having to say goodbye to 10 children I counseled. 10 really sad goodbyes both for them and myself. And yoga teacher training ending. Thankfully there’s been beautiful new beginnings to counter all the sad stuff, but I’m not running from my feelings. Not anymore. At least I’m trying not to. Here’s what I’ve been doing: Naming the feeling out loud. Talking to myself about the way I feel and how it’s affecting me. Listening to positive + relatable podcasts. Listening to music and making new playlists. Practicing my breath work. Taking one day at a time. Hope this is helpful! So much love 💘 #gurltogurl #humantohuman

A brownie, cookie dough, chocolate ganache dessert order that’s paleo, vegan, refined sugar/grains free, and too good to be true!

For the Paleo + Vegan Brownie Layer:
1/4 cup natural, unsalted creamy almond butter
1/4 cup + 2 tablespoons coconut sugar
1/3 cup pure maple syrup
1/4 cup melted coconut oil
3/4 cup unsweetened cocoa powder
1 teaspoon pure vanilla extract
1/4 teaspoon salt
2 eggs or flax eggs
1/2 cup finely ground, blanched almond flour
3/4 cup vegan and paleo Lily’s chocolate chips
Instructions:
Preheat oven to 325°F. Line an 8-inch square baking pan with parchment paper or greased foil. Set aside. In a medium bowl, whisk together almond butter, coconut sugar, maple syrup and coconut oil. Whisk until it resembles caramel. Add cocoa powder in 1/4 cup amounts, whisking until well mixed and thick like frosting. Scrape down the sides of the bowl as necessary. Whisk in vanilla, salt and flax eggs, until well incorporated. Using a rubber spatula, fold in almond flour until you get the consistency of soft dough or very thick batter, and no flour patches remain. Fold in chocolate chips. Pour batter into pan. Bake for 28-36 mins. Mine took about 30 minutes. Cool for 1-2 hours before putting on the cookie dough layer. Optional: take 3 tablespoons of batter and make a thin layer on a cookie sheet and bake until crispy. I used this brownie brittle as a topping on the dessert.
For the Paleo + Vegan Cookie Dough Layer:
1 1/3 cups blanched almond flour
1/3 cup tapioca flour
1/3 cup refined coconut oil melted (refined has no coconut flavor)
1/3 cup pure maple syrup
1 teaspoon pure vanilla extract
1/2 cup @lilys_sweets_chocolate Paleo mini chocolate chips
Instructions:
Combine all ingredients, except for the chocolate chips, in a bowl and stir well. Fold in chocolate chips.
For the Paleo + Vegan Dark Chocolate Ganache Layer:
300g Lilly’s paleo dark chocolate
1 can full-fat coconut milk
Instructions:
Melt the chocolate and heat the coconut milk in a pan. Pour the chocolate into the coconut milk and whisk. Pour over cookie dough layer and refrigerate 4 hours until firm.
