Curries are so simple and low maintenance. I often make large batches and freeze some for a day where I can't be asked to cook, or don't have the time to.
Heat it up and serve by itself, as I often do, or keep a grain of choice in the fridge to have with it. Or if you're going low carb/grain free, mix in some good old leafy greens in there! They will wilt with the heat of the curry (make sure you mix it in AFTER curry is heated through 🙂) Love to add the nuts and seeds for crunch factor 😎
