It’s overcast + raining in Bali today making it very cozy.✨And something I love to do in weather like this is to BAKE. It’s a good thing our little wooden housie is equipped with an oven! It may be a teeny tiny little thing, but it will do the job of baking cake.🙌🏼

Now, I LOVE a good carrot cake🥕but sometimes finding a vegan + gluten-free + sugar-free one can be tricky...
This babe is all of the above + grain-free, making it paleo AND RATHER DELICIOUS.

The frosting is a raw, lemony, cream cheese frosting (obvs dairy-free) 🍋 made with only whole-food ingredients blended with a few dates for sweetness.

I think I’ll serve it with a fresh lemongrass (foraged from a field of lemongrass nearby) + ginger tea. ☺️ Ok, I’m so excited, gotta go bake now!

Woke up to another beautiful Bali day. 🙏🏼
On the way to pick up some fresh organic produce at @samadibali market, our neighbours were harvesting their crop of watermelon. The fruit here is so vibrant + abundant.

Just got home from @thepracticebaliyoga Ecstatic Dance + feeling pretty proud of myself for stepping out of my comfort zone + hitting the dance floor. Reflecting how far I’ve come so far in my recovery is such a blessing.

The Conscious Chef gets political ! ✊🏻🍷🍴⚠️💡🔪🎗🌈🎋🕊👂🏼 Such an honor to cook and raise money for the Robin Harris (D6) campaign.

As County Commissioner, Robin will advocate basic human rights for each of her constituents in District 6 and beyond. Robin supports decriminalization of the homeless and poor. She will explore programs to prevent the school-to-prison-pipeline so that each student will have quality of life and education. Robin will educate the community on opt-out options versus standardized testing. She strongly believes these testing tactics cause disparities in learning, and classroom frustration. Robin would also like to see more mentorship on elementary and middle school campuses versus heavy police presence.

Robin supports: social and economic equality; protection of immigrants’ rights; development of small businesses; protection of the LGBTQIA communities (During this campaign we want to address the many deaths within our transgender community); public banking; universal healthcare. Robin will speak out against any and all forms of police brutality and discrimination.

Environmental Justice and Climate Change are critical areas for Robin as well. During recent natural disasters it is clear that there is no adequate preparedness. As a result, many communities of color were affected negatively and left without power and food for weeks. With the increase of Climate Change crises, there needs to be proactive plans in place.
Robin will listen to as many issues that constituents need to voice so that together District 6 can formalize change for all people.

After taking a much needed break from work (which is not really work because creating with food is my life passion 😉), I’m slowly getting back into the kitchen + currently consulting for a café here in Bali. This time away from work has been such a gift for me + reiterated just how much I absolutely love what I do!

From a very young age I was interested in all happenings in the kitchen. I had a special step-ladder-stool I would climb up onto to watch my Ouma create magic in her farm kitchen. ♥️ At age 9 I was already cooking dinner for my Mom + I, from age 13 I was receiving @jamieoliver cookbooks as birthday gifts (nerd alert), + by age 15 I knew wholeheartedly I wanted to go to chef school.

I’m so stoked I listened to the call + followed my bliss! Through happiness + finding our bliss, we can better ourselves, we can better our families, our communities, + ultimately the🌎✨

I went to the @samadibali Organic Market on Sunday + was so inspired by the🍃🍓🥦 vibrant, fresh, beautiful produce. The happy local Balinese fruit + veggie sellers made the experience that much sweeter.🙏🏼 Life is good.

Whirlwind days in Stockholm 🇸🇪 attending the @eatfoundation #eatforum18, thought leadership on food security, health and sustainability. Big emphasis on the blue economy and how to (sustainably!?) increase yields from the ocean in many many ways. A slightly terrifying prospect for my conservation minded heart, but an inevitability with a reality of a 70% Ocean planet and rising rising rising numbers of hungry humans. Grateful to be invited to attend and contribute to add my voice to the conversation. (‘The Ocean is more than a food source...’ @iamwater_foundation ethos etc.) Also an inspiring array of innovative plant-based foods, inspired & inspiring chefs and an emphasis on eating green! 🌱 Following EAT a small group of passionate Young Global Leaders involved in ocean issues had a workshop around amplifying our work within oceans and the @worldeconomicforum. So many ideas and inspiring people in the world! Wish I could stay longer SWEDEN, and so many dear friends I didn’t get to see... nästa gång! Hej då for now... 💙

WHAT IS UP WITH BITTER?

Did you know that we have only one type of taste receptor for the sweet, sour, salty + savory tastes, but a HEAPING 25 types of taste receptors to detect the bitter taste? How rad is that?!
.
In Ayurveda, there are six tastes or Rasas: Sweet, sour, salty, bitter, pungent, + astringent.🍋 Taste is made from the same five elements that make up the Doshas: space, air, fire, water + earth.
A balanced meal isn’t based on macros of carbs, proteins + fats, but it’s determined by a balance of all the six tastes. The belief is that incorporating all six tastes in your meals will help you maintain balanced nutrition + feel satisfied overall. Overeating any one of these (as we sometimes do with salty + sweet 🍩) can create a severe imbalance in mood, immunity + overall health.

Bitter taste consists of air + space. It’s considered the coolest + lightest of all the tastes. Because of its cool qualities, it’s super detoxifying + removes waste from the body. Bitter taste stimulates breath + metabolism (🌬prana). Recently, scientists discovered the presence of bitter taste buds in the lungs.
.
Bitter foods purify the blood, lower cholesterol, + also help mental purification by freeing you from negative emotions. It’s best for Pitta, good for Kapha, + least beneficial for Vata Dosha.
.
So basically, eat more bitter foods🤘🏼 = leafy greens, 🌿raw green veggies, turmeric, cacao, green, black + most herbal teas.
