Dinner: Hakusai, tofu and Tsukune hot pot in chicken soup pressure-cooked with 12 wings. Served with goma sauce and yuzu pepper.

Nobody really eats bland boiled chicken wing so instead of wasting, pan-fried chicken wing (with sesame oil and shoyu) golden crispy as one extra dish 👌🏻. One bird two stone lol. Actually if you think about it it's 6 chickens two dishes. So I'm not sure if it's that worth it anymore 😂

今日はチージー流シンガポールチキンライス🇸🇬🐔❤︎Today’s #lazymamacookinghack is CheatOne™️ Singapore Chicken Rice. It’s sooooo easy that I repeated a few times. Another rice-cooker-only dish. I’m getting so good at this that soon I won’t be even needing pots and pans anymore.😂

Menu
★Chicken Rice
★Daikon and daikon leaf soup
★Tomato salad in sesame oil and shoyu dressing
★Mixed negi dipping sauce
.
Steps:
1. I marinate boneless chicken thigh (400g) with shiokoji overnight. It makes it sooooo tender confirm as good as $28 chicken rice lol.
2. Add 1 tbsp of sake, chicken stock, minced garlic and ginger (tube) into rice and usual amount of water.
3. Place marinated chicken skin-down (important!!).
4. Press cook button!👇🏻

Dipping sauce
I use a mix of chopped negi, sesame oil, oyster sauce, shoyu, negi oil, garlic and ginger paste, and layu if you prefer spicy. Just mix and taste until it suits your liking.

Recipe(mild taste for kids)
☆1 daikon
☆1 can of crab meat
☆green peas (canned)
☆a dash of salt
☆corn starch
.
Optional (for adults)
☆Hiroshima oyster shoyu
☆grated ginger (tube)
.
Prepare your daikon (you can google my blog post - “The Daikon Theory” for world-class daikon recipe.) Boil daikon in water together with canned crab meat (together with the dashi/gravy!) let it simmer until daikon turns transparent and soft. Add salt to taste. The umami from the crab dashi will already make it flavorful! Add corn starch after turning off the heat until the soup thickens. Add green peas (optional).

For a stronger and adult taste, add a dash of Hiroshima Oyster Shoyu and grated ginger. 😊

Paella-Style Takikomogohan ingredients:
★2 cups of rice
★320ml water
★chopped paprika & onion
★4 tiger prawns
★6 Hamaguri clams
★ Salmon slices
★1 pack of Paella dashi
★1 cube of butter (10g?)

I got lots of requests for the recipe for this meal I posted earlier on IG story, so here's the step-by-step in video! It's really so simple everyone can do it! 😊

I accidentally discovered that when you cover a slice of cheese over egg, it slides down just revealing half the yolk, like a cute Gudetama in blanket! Lots of recipes were created by accident, weren't they? ☺️
.
Only a 2 tips:
★Build the mayo wall thick and tall enough so the egg won't spill over
★Toast on lower heat and slightly longer if you want the yolk to cook through! 🍳🍞
.

Today's (not so) #lazymamacookinghack: Trio-Color Flower Siu Mai 🌸🌼🌺. It's pretty and low-carb friendly because I'm not using any dumpling skin here! I accidentally created this recipe because I wanted to finish the purple cabbage in my fridge 😆.

★Dumpling Skin
1. Purple cabbage
2. Hakusai (long cabbage)
3. Shaved pink kamaboko I got from Ehime prefecture
.
❤︎Filling
1. 250gm minced pork (you can use minced chicken for halal version!)
2. Chopped onion
3. 1 tablespoon of oyster sauce, soy sauce, mirin, sake, corn starch, and a dash of pepper.
.
☆Topping
1. Green peas
2. Carrot (shaped with cutter)
3. Preserved sakura petal
.
Steps:
1. Mix all ❤︎ in a bowl and refrigerate for at least 30 mins.
2. Microwave cabbage leaves for 1-2 minutes until soft, but not cooked.
3. Shape ❤︎ in a ball and wrap it carefully with cabbage leaves and shredded kamaboko.
4. Add topping
5. Steam it for 10 mins on medium low heat.

It's super soft and yummy! I made only 9 siu mai and the rest I threw it into soup to make meatballs ^^

Witch's Special Soup with Magic Potion🔮

🍲Soup:
1. Boil sliced onion in 300ml water until soft.
2. Add purple cabbage and cook for 1-2 minutes until the soup turns bright purple.
3. Add a pinch of salt (optional)

⚗️Magic Potion:
1. Mix two tablespoon of white vinegar, 1 teaspoon of consommé stock (or just salt), 1 tablespoon of herbs infused olive oil
.
Serve the soup, and just pour in the Magic Potion slowly and see magic happen!!😃 Junya was like huh what just happened 😂. (PS: The soup tastes very mediocre 😅. 好看不是很好喝😆)

★Sanma and sansai takikomigohan
1. Add canned sanma (saury fish) together with its shoyu stock, pre-boiled sansai (wild mountain vegetables) available in Meidiya, and Tamogi (golden oyster mushroom) into rice pot with rice.
2. Cook as usual. Everything is from a pack so there's almost zero washing/cutting!

★Kani chawanmushi
1. Add one beaten egg to kani chanmushi dashi pack (swipe to see) mixed with 200ml of hot water 🦀.
2. One pack makes two bowls. Microwave coverless for 3 minutes.
.
★Root vegetables miso soup
1. Add hot water. Only. 😜.
.
I received many questions asking me why my flavored rice doesn't stick to the bottom of my rice cooker or go chaoda (burnt). Welllllll it's going to sound annoying coming from me but I can only assume that because it is #japanquality. Burnt rice or scrubbing a pot full of hardened rice is unheard of 😌.

Yesterday's #lazymamacookinghack - my favorite One Pot Wonder, 一锅熟Takikomigohan again, instant miso soup and 🍓. Only a quick fry and one button press - 7 types of vegetables (hijiki, carrot, bamboo shoot, broccoli, edamame in rice, eggplant and negi in miso soup) and 2 types of protein (pork and fried beancurd)in one meal!
.
1. Fry thin-sliced pork (I use fatty pork belly for super umami!) with sesame oil until half cooked.
.
2. Add hijiki (pre-soaked in water for 5mins), chopped carrot, bamboo shoot (packed), unused broccoli stem from previous meal and fry together. If you don't like eating the stem but throwing away is quite a waste, you can cook it this way!
.
3. Add shoyu, mirin, sake and salt or dashi powder if you prefer a more flavorful taste.
.
4. Pour ingredients on top of rice in rice cooker (don't mix).
.
5. Cook rice.
.
6. Serve and add edamame (from frozen).
.
7. Pour hot water over miso soup and serve.
.

【Swipe for recipe】Today's #lazymamacookinghack: Garlic Butter Salmon Rice, Daikon Steak, Ebi Mayo Broccoli and Hokkaido Melon. 🍈

1.Garlic Butter Salmon Rice - mix a spoon of barley (optional), add water, 1 tablespoon of shoyu, sake, butter, and minced garlic (I use granules, super convenient), and sliced salmon to rice in rice cooker, cook as usual. It's ready in 1 hour! Garnish with Shiso leaves.
.
2. Daikon Steak - slice daikon, stab it all over with a fork, add a pinch of rice (important! It will bring out the sweetness of daikon), add water and microwave for 6 minutes in a heat-safe container . Pat it dry and coat it lightly with flour, and pan-fry in olive oil. Add Yakiniku sauce before turning the heat off. Super yummy!
.
3. Ebi Mayo Broccoli - simply fry shrimps and broccoli (microwaved for 40 seconds) with mayo or if you like, mentaiko mayo.
.
4. Hokkaido Melon - cut and enjoy hehehe.🍈
.
Salmon is a staple in our home but the kids didn't really like the chunky/dry texture of it so cooking it together with rice makes it super easy to eat!

Lunch today is soymilk udon, a favorite repeat at home which I think is super simple and healthy.

1. Dice chicken fillet (optional: marinate overnight with 塩麹shiokoji), coat it lightly with corn starch.
2. Boil 300ml water in a pot with a pack of dashi (or you can use chicken stock) with chopped negi (leek). Add chicken slices.
3. Remove dashi pack once chicken is cooked and turn to low heat then add 300ml of soy milk without reaching boiling point (to keep the texture smooth and milky). Serve with udon, fresh negi, sesame seed and blanched beansprout. I add 辣油 (chili oil) for adult version.

1. Takikomigohan - just throw cut vegetables (broccoli, eringi mushroom, bamboo shoot) and diced chicken into the rice cooker and cook together with rice, dashi and shoyu. 45 minutes later you have a meal!!!
.
2. Simmered daikon ankake with asari- just cook daikon with clams (canned) with dashi, add corn starch and green peas at the end.
.
3. Hijiki and soy bean side dish: from an instant pack I got from Meidiya for $2 (nearing expiry date).
.
In case you are wondering if Sakura can finish that much food, that's for her oniichan hehe.

Today's #Cheesiemade: Savory Oatmeal Breakfast again! Cooked rolled oats with the classic breakfast favorites: Egg, Bacon, Avocado and Cheddar to warm up your lazy morning.
Ingredient (serves 2):
Captain Oats Rolled Oats, two eggs, bacon, avocado, shredded cheddar, spring onion (optional), salt and pepper to taste.
1. Fry the bacon in a fry pan till crispy, keep aside.
2. Cook 1 cup of Captain Oats Rolled Oats in the remaining bacon oil from the fry pan, add 4 cups of water and let it simmer.
3. Add a half a cup of cheddar in the pan while the oats are cooking, and add salt and pepper to taste. If you love it to be more flavorful, you can also add a dash of chicken stock powder.
4. Meanwhile, multitask mamas can fry two eggs in a separate pan!!
5. Cook the oats for 8 minutes, and add more cheddar right before serving! heat of the cooked oats will make it melty. ❤︎
6. Add crispy bacon, sunny-side-up, sliced avocado and spring onion.

1.Matsutake (松茸) is the Japanese equivalent of black truffle. Very rare and expensive. Loooove the flavor! Both the rice and soup use instant stock so it's cheap and fast! 😜

2.Today I saw on TV that microwave heated vegetables have more vitamin preserved compared to boiling/blanching!
So I microwaved the spinach, super fuss-free and time-saving!

The pink siew mai (I anyhow named it Sakura siew mai haha🌸) is wrapped with shredded kamaboko🍥, which I bought during my trip to Ehime Prefecture.❤︎(*´∇`*)

☆Hot cake mix 1 pack (+ milk and egg as stated)
☆Greek Yogurt 1 tub
☆Strawberries

Steps:
1. Strain yogurt overnight.
2. Cook pancake in your fry pan (we used a Tamagoyaki pan for the even square shape)
2. Apply well-strained yogurt on each layer, top with sliced strawberries
3. Stack and continue step 2
4. Decorate with strawberries and color ball sprinkles!

#lazymamacookinghack tip of the day: the only thing I needed was minced meat, mix and pan fry!! I got this Hamburg Helper from Japan (I think I saw it in Meidiya before), and it makes making Hamburg soooooo effortless. What is this magic powder?!? 😳After tasting it I was like, why do I even bother making Hamburg from scratch? 😱😱😱 The result was soft and juice patties with the perfect seasoning!

Ingredient:
☆250gm of minced meat
☆120ml of milk or water (I used milk)
☆1 packet of Hamburg Helper
.
Sauce:
☆Worcestershire Sauce 2tbs
☆Cooking sake 1tbs
☆Ketchup 3tbs

I didn't have ketchup so I replaced it with Vegetable juice. Works perfectly 👍🏻.

#Nikujaga is a classic Japanese comfort food and it's super easy to cook! You can google the traditional recipe. I made mine in #vermicular without sugar and mirin because I don't like my savory meals sweet 😳. No oil is used in cooking too, to make up for the duck fat aplenty last night 😂. .

#lazymamacookinghack tip: I use tube garlic so that I don't have to chop and mince and get my hands all garlicky, and also tube paste so that I don't save time concocting seasoning (and less dishes to wash!). The iron wok I use is River Light Kiwame from Tokyu Hands SG. Very good "wok hei". 👍🏻

Have you ever tried Sea Grape, also known as the Green Caviar? In Japanese it is called umi budo (sea grape haha). I first tried it in an Okinawa restaurant and I loved the fancy texture! It is really like eating tobiko fish roes, except that this is a kind of seaweed. Only later that I found out that it is actually a superfood packed with nutrients. It was traditionally found in the waters of Okinawa, but @mealbelly were able to source this rare superfood from the quite waters of South Vietnam, farm it in a sheltered environment and carefully harvested.
It is super easy to prepare too! Simply #rinsesoakserve. It is also versatile to be added into many dishes such as salad and soups. Today I made a snack plate of Umi Budo Gunkan Maki (sushi), and also a chicken salad, serve with ponzu sauce.

I bought my Japanese eggs safe for raw consumption from Meidiya. Expensive but 买个安心。

How to:
1. Separate the egg white from yolk
2. Mix egg white with rice first if you are not a fan of the egg white texture.
3. Place your egg yolk.
4. Top with shoyu and your favorite topping.

Shoyu is specially made for TKG. My topping today was sesame seeds and shirasu for extra calcium. The latest trend in Japan is to eat it with a drizzle of olive oil. Loved it!

Hanjuku Aji Tamago🥚:
1. Boil egg for 7minutes (I did 6.5 and it's a little too runny)
2. Soak it in a ziplock bag filled with Tsuyu sauce (soy sauce will do too!) I usually batch make 5-8 eggs to maximize use of sauce.
3.Marinate egg for at least 24 hours. The longer the yummier and creamier the yolk will become!!
4. When you cut the rice ball, make sure you wet your knife and cut through the cling wrap.

Onigiri Rice🍘:
1. Cook rice with dashi shoyu and mirin, or mix the leftover tsuyu sauce from the egg marinate. ☆Tuna Onigiri☆

#Cheesiemade Snack delivery today for @number_76sg : Hanjuku Aji Tamago Onigiri and Takikomi Gohan Tuna onigiri 🍘🍘🍘🍙🍙🍙. The egg is a bit too runny to hold so it looks really messy after cutting 😭😭😭. I boiled it for 6.5 minutes, I think 7 minutes will be perfect.
By the way does anyone know a surefire way to peel a perfect half-boiled egg?? 🥚 I have tried so many methods including adding egg after water is boiled and cooling down with ice water, poking a tiny hole with needle, to the famous 3 seconds shake-in-a-glass way, but they all end up broken and looked like they just came back from war 😭😭😭. Please teach me!!! 🙏

Hot Pot Ingredient:
☆Hakusai (medium size)
☆Negi X1
☆Silver Cod 2 slices
☆Mizuna half pack
☆Dashi soup stock 800ml

Chicken Tsukune
❤︎Minced chicken 300g
❤︎Chopped carrot
❤︎Chopped negi
❤︎ Egg X1
❤︎Salt and pepper
.
White Bear Daikon Oroshi
✳︎ Grated daikon and cut seaweed
.
1.Add hakusai, negi and silver cod in pot and cook waterless at low heat for 30mins
2.Add dashi stock, mix ❤︎ and add it into pot in bite size with spoon, cook at medium heat for 5 minutes
3.Grate daikon and shape it with the white bear mold (can be found in Daiso for $2!) Remember to squeeze out all the water from the daikon for the shape to hold. Decorate with seaweed.

I also added shiitake, harusame noodles, spinach and abura age for the second round because it was all gone in a blink. Junya had 3 bowls 😂.

#cheesiemade : baked sweet potato bites, perfect snack for baby and toddler 🍠. 1. Boil 500g of Kagoshima Japanese sweet potato in water till soft
2. Mash and add 3 tablespoon of milk and 30g butter, a pinch of salt. (If you like you can add sugar but for me it is good enough without!)
3. Bring out your favorite cookie cutter for those cute characters
4. Brush a layer of egg yolk and bake at 200C for 15 minutes.

Super yummy quick snack (hi calorie though lol): Crispy Mentai Mayo Aburaage!
★Two sheets of aburaage puff
★Slice one side open and insert shredded pizza cheese
★Spread mayo and mentaiko (from a fresh sac. You can also use Mentaimayo if you have) on top.
★Air-fry at 180C for 3 minutes

Dinner: Hakusai, tofu and Tsukune hot pot in chicken soup pressure-cooked with 12 wings. Served with goma sauce and yuzu pepper.

Nobody really eats bland boiled chicken wing so instead of wasting, pan-fried chicken wing (with sesame oil and shoyu) golden crispy as one extra dish 👌🏻. One bird two stone lol. Actually if you think about it it's 6 chickens two dishes. So I'm not sure if it's that worth it anymore 😂
