No matter what time of year, I love soup and in this week’s instalment of #AGloriousYear, I’m making French Onion Soup. A nod to the years I lived in France.
In my opinion, onions are wildly under-rated. They’re not only cheap and plentiful (and probably sitting in your cupboard right now), they’re also a great source of quercetin and allicin which help protect against harmful bacteria and also support the smallest blood vessels in the body, the capillaries.
