Chicken and Leek Barley risotto
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Another budget dinner recipe coming your way! This one comes to only £1.35pp!! Barely is a great alternative to risotto rice and is way cheaper! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
200g barley • 1 onion • 1/2 large leek • 1 chicken breast • 1 chicken stock pot • 50g parmesan
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1.Soak the barley overnight or for a few hours
2. Chop and fry the onion until softened then chop and add the chicken breast until sealed
3. Drain the barley and add to the pan with boiling water until covered as well as the stick pot
4. Leave to simmer for 20-25 minutes, topping up with water as needed and stirring often.
5. Grate in the parmesan and serve

Sooo... not sure if anyone realised my little counting mistake on week 5?? Chutney chicken thighs with sweet potato rostis!!
⠀⠀⠀⠀⠀⠀⠀⠀⠀
So these were absolutely incredible😍 chicken thighs are a little but higher in fat and lower in protein that the breast but they are also cheaper and in my opinion, much tastier! By using skinless thighs or takig the skin off yourself, it does cut down on the fat, this is what I used. This whole meal (not including the mangetout) was £1.50 pp and the macros came to 65g carbs, 51g protein and 24g fat!

(For 2 people)
• For the chicken I coated 4 breasts in 50g mango chutney and 30g of light mayo then seasoned with salt and pepper and stuck in the oven for about 35 minutes, turning halfway.
• For the rostis I peeled and grated the sweet potato and then mixed them with 1 egg and one onion which I roughly chopped and fried. Then formed little patties in my hand and roasted them in the oven for about 35-40 minutes.

This morning's (v well presented) breakfast!

So since I am now a student I'm all about that budget life so I'll be doing a lil budget meals series with the hashtag #elisesbudgetmeals 🎉 they're probably not going to be very fancy or complicated recipes, just cheap, healthy meals!

And what better a meal to start with than oats! These banana nut overnight oats are about 66p per portion and 359 calories!
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients: 40g oats • 1 tbsp chia seeds • 1 medium banana • 1 tbsp of pbfit (or just peanut butter) • 100ml cashew milk • water ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Method:
1. Chuck all the ingredients into a jar or bowl and mix them together (add enough water to make the mixture still quite thick but a lil runny)
2. Leave in fridge overnight!

So yesterday I moved up to St Andrews for uni and today I had my first gym session! The gym was amazing I must admit but I do miss my wee puregym, especially since I got to know the people who went there and I could have a chat with them. Obviously I'm now on a new gym with new people so it was a little bit intimidating and I did feel a bit awkward but I pushed through and still got a great workout in!

Weigh in day today. Little sceptical about it this week, went out for a meal as was the last week working in London. Making baby gainzzz

Although it doesn't look like a lot I can't tell you how much my upper body has leaned out this year. I haven't been weightlifting for long at all (Not even a year) so a lil bit of progress makes me happy! What the photos also don't show is how much my attitude has changed! I now love to train for the sake of training rather than seeing it as a chore! I feel much more positive towards food and exercise and I'm a happy lil bunny now!

This was honestly soo good! Only took like 15 mins and it is FILLED with veggies! I've never really made a frittata before but I could imagine it would be a great way to use leftovers! Definitely something I'll make again!

Quick lil review of the recipe book for anyone who's contemplating buying it; all the recipes are super super simple! I would definitely say it's good for everyone of any level of cooking! The recipes that I've tried taste incredible as well! I would 10/10 reccomend the purchase!
