For my birthday, I requested my awesome husband cook me a special dinner of sea scallops (which we've had in the freezer for several weeks and I've been afraid to make them because I've never made them before and I didn't want to ruin them. LOL). He did not disappoint. Oh my goodness, this was amazing. HE is AMAZING.
I also made myself the "trimtastic chocolate zucchini cake" in the THM cookbook. Happy birthday, Self! 😂😂 It's yummy, and everyone likes it. However, it kind of looks like the zucchini sunk to the bottom? LOL there is a weird jelly-like layer on the bottom that tasted kinda gross...so I scraped it off. 🙄🙄 Also, I know they say this cake is better the next day. So, I guess tomorrow will be cake for breakfast! Darn. 😁😁😁
