The recipe for my homemade #glutenfree Italian Meatballs that are #21dayfixapproved.😝

Ingredients:
Ground beef (or ground turkey)
Half an onion
2 eggs
2 garlic cloves (or minced garlic)
Pink salt & pepper
Gluten-free Panko Italian bread crumbs
2 TBSP Graded Parmesan cheese
1 TSP of dried oregano
Some fresh parsley

Dice the onion into really small pieces then sauté the onion and garlic in a skillet.

Mix together the ground beef, eggs, bread crumbs, salt&pepper, parmesan cheese, oregano, and parsley all together.

Once the onion mixture has simmered for about 5-10 minutes then mix into the bowl with the meat. Stir all together until completely mixed.

A little trick to rolling the meat into round balls without getting your hands all nasty is to get your hands wet before you roll every other ball and it won’t stick!

Put in the oven on 425 for about 13-20 minutes until cooked through!

Back in October 2017 I bought this shirt, it was to tight in the belly and in the arms. So I threw it in my closet as a goal shirt.

To my surprise it fit and was comfortable! So I excitedly wore it to work today!

Lunch time! Today I am indulging in a salad, water and a good dose of personal development. I wanted SO badly to go get Chipotle for lunch today (I didn’t get around to meal prepping yesterday and didn’t bring my lunch), but I stuck to my plan and got this amazing salad instead. Winter Break has me moving slow so after our trip to Target I was completely unmotivated to make lunch for myself and the kids. I thought about driving through Chick-Fil-A, but then I remembered I had my Taco Bowls from Sunday’s meal prep which keeps me on track with my nutritional plan and also doesn’t break the bank! CFA adds up real fast with four kids in tow!!.

Yogurt bark! I wanted a healthier alternative than a box of Girl Scout cookies to satisfy my sweet tooth 🍫🍪

I mixed Greek yogurt with honey and cinnamon for my base, then added blueberries and a handful of white chocolate chips. I lined an 8x8 baking dish with parchment paper (makes the bark lift out easier) and froze for at least 4 hours •
This is a perfect treat to make for those of you who need a healthy, budget friendly dessert
