It been a rough last few days. I really needed something happy and something to get my mind off of things. So I decided to bake some
German Chocolate Protein Cupcakes!! @1stphorm just dropped this new flavor and it’s unbelievable!! This is the perfect protein for a meal replacement shake, smoothie or to bake with! .
Ingredients
Cupcakes:
1/3C Coconut flour
1/3C Stevia in the Raw
2 scoops @1stphorm Level-1 German Chocolate Cake protein powder
1/4t salt
1t baking powder
1t vanilla extract
2T applesauce
1/3 C & 2T unsweetened vanilla almond milk
2 egg whites
1 whole egg
.
Frosting
2T coconut oil
½ scoop @1stphorm Level-1 German Chocolate Cake Protein Powder
2T coconut flakes
2T chopped pecans
Optional: Melted 85% dark chocolate for drizzle

Directions:
-
Preheat oven to 325*
-
Line muffin tin with cupcake liners -
In a small bowl mix together all dry ingredients
-
In a medium bowl mix together all wet ingredients
-
Add the small bowl to the medium bowl and mix well
-
Spoon into cupcake liners filling the half full and bake for 18-20mins. Once done, let rest in pan 2-3 mins then turn cupcakes out onto cooling rack. Allow to cool completely
-
When cupcakes are cooled, you can glaze them:

In a small bowl add 2T coconut oil and microwave 15-20 seconds. Just enough to soften the oil and begin to melt it. You don’t want it completely melted
-
Add a small amount of the protein powder at a time and mix until all protein is used. -
Spoon a small amount of the frosting on top of the cupcake then sprinkle with coconut and pecan then lightly drizzle more frosting over the coconut and pecans and place on a plate or tray. Once all are frosted, place in the fridge and let glaze set 4-5 mins. Remove and add melted dark chocolate drizzle if you choose. Then allow to set in the fridge to firm. You may store them in the fridge or place in an airtight container at room temperature.
