Picked up a trailer full of tart cherries today. These are Balatons - they will be purposefully combined with other varietals of tart cherry and refermented in a blend of 1, 2, and 3 year old 100% spontaneous, lambic-inspired wort. This beer will eventually be bottled and naturally conditioned before being released as this year's CYGNUS: Cherry. -- Coolship inoculated, barrel fermented, barrel aged, barrel fruited.

Last year this was one of my favorite beers that we made-- but this year is going to be on another level!

The spontaneous barrel stock is tasting amazing - so many options for blending, so I'm blending, in part, specific to the fruit (ie each fruit type and varietal will get specific barrels selected for fruiting vs making one big blend of beer and then fruiting all of it). Another great thing for this year is super tasty, true-to-taste whole fruit.

Last year we used Montmorency whole fruit puree as I didn't have a source of high quality cherries with the flavor I wanted. It consists ONLY of cherries, nothing else, and is not a concentrate. It's a good product but doesn't allow for mixing different varieties or the flavor with comes from unpitted cherries.

This year I'll be using a custom selection of multiple varieties, both Morello-type (like the Balatons in the picture) and Amarelle-type (like Montmorency is). The different varieties will be refermented mostly separately so the blend can happen after I see how they play with the beer and refermentation. The idea is to get an even greater depth of fruit flavor to match the complexity of the spontaneous lambic-inspired beer.

As a special surprise to celebrate our release of ROSWELL next week, we're releasing SUPER CONSTELLATION at 2pm today.

SUPER CONSTELLATION is a blend of three different bases, 40% Lambic-inspired spontaneous beer and 60% blend of two spontaneous solera beers. The beer is then re-fermented on 1.5lb/gal of peaches.

Beautiful peach flavor, amazing funk, and a brilliant depth of flavor that shines through. This beer is very fruit-forward, but at the more traditional end of the fruiting spectrum.

ROSWELL is made once per year during the late spring from a Lambic-inspired wort that was brewed earlier that fall. This gives the beer a depth of flavor but with a lower acidity than it would have after spending a summer in the barrel – ideal considering the amount of acidity naturally present in the fruit.

It has a rich and beautiful spontaneous flavor, with a distinct funk, and complexity that stands up to and melds into the heavy amount of vibrant fruit flavor and aroma. The true wild-caught microbes mean that the beer is deliciously dry while still packing an incredible amount of fruit flavor. Flavors include apricot, blackberry, cranberry, guava, raspberry, and blueberry.
