Note to self:
400g Finnish pork belly marinated with five spice, wine and soy overnight in fridge uncovered. Pluck away the "hairs". Make lots of small holes on skin. Rub skin with vinegar and sprinkle lots of sea salt. Put in a tin foil shaped tray just wrapping round the meat with 1inch border. Quarter steam oven at 180c for 55 mins. Then grill on high heat for 10 mins careful not to let the skin get too charred. Rest 10 mins and cut into yummy crackling chunks. Eat right away with a dab of mustard.
