The Classic Dinner Siniya (serving tray)
📍Sennar, Sudan- (Photo taken during my trip to Sudan a few months ago)
Boiled and set sorghum porridge with a minced meat, dried okra and tomato stew
Jews Mallow stew. The Sudanese version tends to be thicker in consistency compared to the middle eastern, soup-like version. The process of preparing the mulukhiya leaves is long and can be deemed a workout!
3) سمك محمر
Fried fish: Here, it was made using fish fresh from the Blue Nile! Coated in a mix of ground cumin, coriander and flour
4) دجاج محمر
Fried chicken: Coated with a flour, cumin-coriander mix
Kisra: A fermented sourghum and wheat flat bread that has a nice sour taste (eaten with the mulukhiya)
Traditional bread brought straight
from the local bakery!
