I don’t know about you guys but I love my veggies. Thankfully so do my kids. Our lunch from a few weeks back was this incredibly flavourful plate of grilled vegetables with a balsamic reduction that we ate with toasted ciabatta 😍and I’d say that I enjoyed eating this even more because all the veggies and herbs apart from the baby marrow, were picked by yours truly when I visited @greenheartorganicfarms with @freedomdelivers a few days before. We had it as a main meal but it makes a pretty good side dish too. **NotSponsored
Here’s my very, very easy recipe:
Grilled Veggies with balsamic reduction
1 medium eggplant, sliced into rounds
3-3 baby marrow/zucchini, sliced into rounds
1/4 each red, green and yellow capsicum, sliced into strips
3 cloves garlic, sliced
2 tbsp fresh parsley
A few sprigs of fresh zaater
2 tbsp toasted almond flakes
1 tbsp toasted pine nuts
1/4 cup balsamic vinegar
1 tbsp honey (you can add more or less or replace with some brown sugar instead)
Grill all the veggies except for the eggplant with 2 cloves of garlic, a little chopped fresh zaater and seasoning in a pan over high heat. Remove the veggies and using the same pan grill the eggplant with the remaining garlic and seasoning.
Place the balsamic vinegar and honey into a saucepan and reduce till about a 1/3 of the consistency and thick enough to pour. .
Pour the balsamic reduction over the veggies (as much as you’d like) and mix carefully.
Place the veggies onto a serving platter and generously sprinkle with pine nuts, toasted almond flakes, parsley and more fresh zaater.
Serve with toasted ciabatta or crusty bread.
