I’m late to the falooda party because even though I’ve been making this milky dessert often in Ramadaan, it got eaten before I could take any pics 😋This batch is from our iftaar when @thenationaluae visited for a photo shoot and is a bit different from the usual Indian #/Pakistani version. South Africans make it more like a rose milk jelly and as I’m sure that you can guess, we love it! Plus it’s extremely cooling during a summer Ramadaan so it goes down well.
I’ve been using the frothy falooda recipe in the Indian Delight recipe book with one or two changes and it’s never failed me so comment below if you want me to share! PS: I poured mine into ramekins and the cutest Perspex squares!
Frothy falooda
Recipe :adapted from the Indian Delights

1 litre milk
1 Small tin cream (155g)
4 tbsp condensed milk
2 tbsp sugar
1/2 tsp cardamom powder
1 1/2 tsp falooda powder or agar agar powder
Rose essence or rose syrup to taste ( I used approximately 3-4 tbsp syrup)
Mix agar agar in a little cold milk. Add to he milk as it begins to get hot slowly on the stove. Simmer gently till milk is reduced to 3/4 it’s original quantity. Remove from the heat and all the ingredients except for the cream and beat with a whisk.
When mixture is cold, add the cream and beat again. Pour into ramekins or bowls and leave to set in the fridge.
I adjust the sweetness to my liking and I don’t boil the milk too much because we prefer it softer and melt in the mouth, rather than it being too set and firm. You can decide how you’d like it😋 ...

I’ve been trying really hard to be #BetterThisRamadan, to eat well and to reduce food wastage which means that recycling leftovers has been a top priority for me. We had some leftover rice last week that I repurposed by adding some healthy @EmborgArabia Organic Mixed Vegetables, a little low sodium soy and some oyster sauce, to create a wholesome and delicious fried rice for my family’s iftaar 😋. To those of you reading this, I hope that you’ll join me for the remaining days of Ramadaan by living healthily, eating well and being mindful of food wastage during this time.

It was so hot today, all I wanted to do is drink is this cooling and comforting burnt caramel milkshake with caramel popcorn on top! My new fav, burnt caramel makes the milkshake that much yummier and not as cloying, so obviously I could drink a whole litre of this 😜You know that you want to make this for iftaar or for whenever so go on, get shaking😉
Burnt caramel milkshake

3 cups milk
1 cup ice cream
Approximately 3- 4 tbsp homemade or shop bought burnt caramel sauce (Starbucks has a yumm version)
Caramel popcorn
Hershey’s caramel sauce to drizzle
Blend the first three ingredients together and then top with the popcorn and sauce.
Burnt caramel:
1 cup sugar
1/2 cup water
Add the sugar to a saucepan and allow it to dissolve, mixing constantly. Once it’s golden, continue to cook till it becomes a bit darker than usual, and begins to foam and maybe smoke slightly (not very long, you don’t want it very burnt just slightly darker). Remove from the heat and take care because it’s very hot at this point. Slowly and carefully add in the water which may cause it to splutter and continue stirring. Cook on medium till the mixture is of a syrupy consistency.
Leave to cool and then use when needed! ...

Ingredients:
300gr or 5 croissants (preferably not fresh)
2 cups fresh cream
1-2 cups milk (depending on how fresh your croissants are)
2 tsp rose water
1/2 - 1 cup sugar
30ml sliced pista
30ml pine nuts
30 ml sultanas
15ml chopped almonds
1/2 tbsp coconut
Method:
1. Tear croissants into smaller pieces and place into an ovenproof dish.
2. In another dish, combine the rest of the ingredients and mix well.
3. Pour the liquid over the croissants and leave to soak for a few minutes.
4. Bake in a preheated oven on 180c till liquid has reduced and golden brown on top, approximately 20 – 25 minutes. ...

Moongh dhal(yellow lentils) bhajia/pakora waffles. I tried to get all the flavour of the bhajias without as much of the oil, so the first time I added about 3 tbsp flour to the original recipe but the second time around, just 1 tbsp flour and about 2 tbsp ghee to the mixture. I kept the rest as is which seemed to work well, though I’d recommend eating them while they’re hot 😋
I used the recipe in the South African Indian Delights recipe book which always comes out delicious! I don’t have it on me now but if you’d like it, comment below and I’ll see what I can do!
Moongh dhal bhajias/pakoras waffles
Recipe: (slightly adapted from the Indian Delights) @tableforfivedubai

1 cup dhal- soaked overnight
1 medium onion - chopped
1 tsp baking powder
1 tsp salt
1 tsp ground coriander powder
Ground Green chilli to taste
1/4 tsp chili powder
2 tbsp chopped coriander
1 egg
1 tbsp flour (optional)
2 tbsp ghee
Wash dhal well and drain. Grind it and onions with a hand bender. Add the rest of the ingredients and mix well. Pour into a ready waffle maker. Cook till done. Serve hot with chutney.

250g yoghurt
1/2 cup milk or buttermilk
3 tbsp rose syrup
1/4 tsp cardamom
Sliced Pista
A pinch of Himalayan pink salt
Ice cubes
Optional: fresh rose petals •Add everything except pista to a blender or Nutribullet and combine well
•Optional: Add fresh rose petals to the mixture or use buttermilk instead of yoghurt •Pour into glasses
•Sprinkle sliced pista over and top with a dried rosebud
•Serve cold ....

I made my kiddos help me with these wonton quiche/pizza cups last week. They wanted something yummy to munch on for iftaar and so we decided on this and a leek and potato soup for dinner. Wonton wrappers make perfectly crispy vessels to fill with delicious ingredients and all we did was make a mixture of eggs, milk, cheese, seasoning and herbs, with a little spiced cubed chicken to pop into the wontons. If I recall correctly, they took under ten minutes to cook and were ready to reheat in time for us to break our fast 😋 If you can’t find wonton wrappers, spring roll pastry or thin tortillas work just as well, as long as you cut them into the correct size for your muffin trays. Sharing an old South African favourite tonight, a traditional methi lagan or savoury cake as is easiest to call in it English. I’ve been using my mum’s recipe since the first time I made it, and I have fond memories of many past iftaars indulging in these flavourful fenugreek squares dipped in red chilli chutney with a cold glass of rose flavoured milkshake 😋 I made this lot for the @khaleejtimes Ramadaan magazine and served them on my gorgeous @silsaldesignhouse platter that was the perfect size! 😍💙What are your go to savouries for Ramadaan?

1/2 cup fenugreek leaves, chopped
1 onion, grated
250g creamstyle sweetcorn
1/4 cup mielie meal (ground maize flour available at Spinneys) or semolina
1/4 cup chickpea flour
2 tbsp cake flour
1/4 cup milk
1/2 cup oil/ghee
1/2 cup fresh chopped carrots and peas
2 eggs
1/2 tsp salt
1 1/4 tsp baking powder
Pinch of turmeric
1/2 tsp of ground coriander and cumin powders mixed (1/4 of each)
3/4 cup raw chicken breast, cubed (optional)
Ground green chilli to taste
1/4 cup fresh coriander, chopped
Sesame seeds
Mix all the wet ingredients together and then add to the dry ingredients. Pour it into a greased oven proof dish and sprinkle with sesame seeds. Bake in a preheated oven at 180c for approximately 30-40 mins or till golden and cooked. Leave to set while it cools. Once cooled, cut into squares and serve warm.

I forgot to post this pic from @wokboyz last night so I’m afraid that I’m going to have to make you hungry now😋I’ve ordered Asian food for delivery before and been sorely disappointed, but thankfully not this time. Flavourful and generous portions and despite not having an extensive menu, there’s still enough variety since you can customise your mains with your choice of rice or noodles, spicy or mild, and your choice of sauces etc. PS: when @wokboyz says spicy chicken wings, they’re not kidding!😝Delicious but oh so fiery ....

Fluffy puffy dhai wara! I make this every Ramadaan and sometimes out of Ramadaan too because we like it, so why not 😉For those not familiar with it, dhai wara is a fried dough made with yoghurt or sour milk, basically a puri, then dipped into a sugar syrup after frying and finally dusted with coconut. I made these the previous week so I think it’s time again that I made some more?😋 What yummy desserts have you guys been making?
Dhai waras

1 cup flour
1 1/2 tsp baking powder
1/2 cup yoghurt
1 1/2 tbsp ghee

Rub the ghee into the flour and baking powder mixture. Add yoghurt to make a dough. Leave the dough to rest for an hour. Roll out and cut into shapes. Fry in deep, hot oil When cool, dip in syrup.
Syrup: 1 1/2 cups sugar 3/4 cup water Boil together till sticky

I prefer to roll out my dough a bit thinner so that its lighter and don't forget when frying to gently push down with a strainer so that it puffs up well.
As for the syrup, I dip, not soak and then dust in coconut. Happy eating!
