Added a little (piz)za-ing to my meatballs today!😋 Don’t know why but I’ve definitely had pizza on the brain lately.🍕 Pizza salad, pizza eggs, actual pizza & now these TURKEY PIZZA MEATBALLS! Loaded them up with all the veggies (as per usual) & served them with some spiced up marinara for a fab lunch after the gym.👌🏻 Anyone else think about their post workout meal more than actually doing workout itself?!🙋🏼‍♀️ That was totally me this morning! But hey it got me through & home to this delicious plate so no complaints here.😋

(And if you really want to get crazy, top these bad boys with some Parmesan or melted mozzarella.😉) Uh-freakin-mazing!😍

Coworker comes in: “Our friend just gave us a ton of elk meat, do you have any ideas what we can do with it?”
Other coworker: *stares blankly*
Caitlin: Proceeds to list all the countless ways there is to prepare elk, including what it tastes like, smell, texture...oh by the way is it ground or a steak??🤦🏼‍♀️ (Honestly...it’s amazing I have any friends...😂) Which then reminded me that, “oh yeah, I still have some elk in my freezer!” Soo here’s a throw back to lunch from a few days ago.😊 Might sound crazy but I always love switching up my proteins every now & then. With so many different lean options out there, it’s such a great way to add variety to your diet! (And besides, who wants to eat boring old chicken all the time anyway??😋)

So summer called...they want they’re meal back... Well I hate to break it to ya summer but this dinner’s wayy too good not to be enjoyed all year round!😋 (You can take your ridiculously hot weather back though... I think it’s safe to say that I love seasonings!😊All different kinds too. So when I kept seeing turmeric seasoned eggs all over Insta I knew that I needed to give it a try. And I’m so glad I did because HOT DAYUM they are good!🙌🏻 Paired them up with my favorite cinnamon roasted butternut squash “chips” with some mashed avo to dip them in...topped with @traderjoes everything bagel seasoning of course.😉 Some might say I over do it, but I say you can never have enough! It’s all about that flavor loves!😋 Hope you’re all enjoying your Sunday!😊💕

Friday’s are for cozy nights in complete with fuzzy blankets, lots of movies & this totally LOADED pizza!🍕🤓 Finally got my hands on some @califlourfoods pizza crust & I just couldn’t wait to try it! (All you peeps were killing me with your pizza posts lately😋) And Friday’s & pizza just seem to go together, am I right??😉 But seriously this crust is unreal! Only 5 ingredients & super high in protein...so basically perfect for me!💪🏻 And the best part is that is came with 2 crusts! I can already feel the delicious ideas coming...ohh the PIZZA-bilities!🤪

Combining my boyfriend’s love of buffalo wings with my love of meatballs..and you get these awesome bad boys! Believe me when I say they are amaze balls!🙌🏻 Not only are they full of flavor, but jam packed with veggies too! (Shhh they’ll never know.🤫) So happy that I prepped these little guys over the weekend for a super easy lunch during the week. Is there really anything better than brunch on a Sunday morning?? That’d be a big fat NO in my book! ...Well unless you’re offering a giant bowl of ice cream, then I’d HAVE to take you up on that.🤭 (Ice cream is my weakness🍦😜) But a brunch like this definitely helps get me through the week! Decided to sub out my usual butternut squash for some delicata & it was perfect! I’ve only recently discovered delicata & I have to say I’m hooked!😍 Tastes just as sweet as b-nut squash but without all the cutting & prep work.🙌🏻 #winnerwinner

Ending this Friday-Eve with a little fiesta tonight!💃🏼 We made a sh** ton of pork carnitas in the crockpot yesterday so guess what was back on the menu tonight?!😉 Just another reason I love crockpot meals...leftovers for dayzz!👌🏻(Told ya, I’m all about those easy meals this week.🙌🏻) Whenever we cook a ton of food, my family always makes sure to freeze some leftovers for later. That way weeks can go by and you still have some awesome choices for lunch or a quick & easy dinner whenever you need it! And it’s less expensive & better for you than buying those pre-made frozen meals too. (Even though I’m not gonna lie, I loved those things when I was little.🤫 Kid Cuisine anyone??) Anyways, this definitely has redefined my definition of “frozen meals” for sure!😋

Ingredients
5lb pork shoulder
1 onion, chopped
1 jalapeño, chopped
1 1/2 Tbsp sea salt
1 tsp black pepper
4-5 garlic cloves
Juice of 2-3 oranges
Rub
1 Tbsp dried oregano
2 tsp cumin
1 Tbsp coconut oil
.
Directions
1. Rub salt & pepper all over pork.
2. Combine rub ingredients & rub all over pork.
3. Place pork in a crockpot & top with remaining ingredients.
4. Cook on low for 6-8 hours or high for 4 hours. (Low is much better in my opinion😊)
5. Remove from crockpot, shred & serve!😋

Some days I crave simple basic meals that are super easy & require no thought at all... Usually Fridays also mean that we have next to nothing in our fridge, so I always end up finding myself playing “What Concoction Can I Come Up With Today” featuring ALL the leftovers from earlier in the week. Dark chocolate, milk chocolate, pomegrantes... Chocolate Covered Pomagranates
Handful of chocolate (whichever kind you prefer)
Pomegranate seeds
(I also added 1 tsp of @furtherfood collagen to the mix)

Directions
1. Place cupcake holders in a mini cupcake tin. Fill each cup with a few pomegranate seeds.
2. Heat chocolate in the microwave at 15 sec. intervals until fully melted.(Don’t over cook or chocolate will burn!😬)
3. Pour chocolate into each cup & make sure it reaches all the way to the bottom.
4. Top with a few more pomegranates & pop that tray into the fridge until your ready to eat!
