Pregaming the happiest place on Earth the only way I know how...with some HAZELNUT MICKEY MOUSE FRENCH TOAST!😋 Yep that’s right! The boyfriend & I are enjoying a little stay-cation at Disneyland this weekend & I couldn’t be more excited!😍 Just gotta get through the work day & then it’s time to feel like a kid again.🕺🏼 (Although I’m already feeling like I’m 5 with this super sweet breakfast.🤭) But ya gotta get into the spirit at some point right?! ➡️ Mickey Mouse French toast🍞 (mix 1 egg, 2 Tbsp unsweetened almond milk, 1/2 tsp hazelnut extract & cinnamon, dip 4 sourdough slices -cut in Mickey Mouse shapes- into mixture & cook in a pan until crispy), @lightandfit vanilla coconut greek yogurt, unsweetened coconut flakes, @peanutbutterco dark chocolate pb, strawberries🍓 & blueberries. .

Side note: Am I the only one who gets a little nervous when cooking with alcohol?? I mean the mere fact that it can catch on fire just like that should make it an absolute NO in my book.🙅🏼‍♀️ And yet I’m always so intrigued...🤔 Thankfully though my boyfriend was able to man the grill while I watched far away from the comforts of my kitchen...on cocktail duty.😉 Charlie has officially been dubbed the new grill master loves! Tu pollo es el fuego senor!🔥(Ok that’s definitely the tequila talking...😝)

Tequila Lime Chicken
1/4 cup tequila
3 Tbsp lime juice
3-4 cloves garlic, minced
1 tsp paprika
1 tsp sea salt
3/4 tsp chili powder
1/4 tsp black pepper
1 Tbsp @chosenfoods avocado oil

Directions
1. Combine all ingredients & marinate chicken breasts for 2 hours. Grill over direct heat 5-6 minutes per side or bake at 400 for 20 minutes.

And sometimes you just need a burger bowl with all the fixings to help get yourself through this crazy Monday.🍔 I don’t know about y’all but these weekends are just wayy too short! I vote for a mandatory 3 day weekend every week starting ASAP! Who’s with me??!!🙋🏼‍♀️ (I know I know, wishful thinking right?!🤔) Sooo until then I’ll just keep munchin’ away on this burger bowl pretending I’m still at the beach enjoying this fresh off the bbq.😎☀️🌊 On the bright side though, only 4 more days until next weekend! ➡️ 2 turkey burger patties (ground turkey, riced cauliflower, red onion, garlic salt, pepper & a dash of Worcestershire sauce), lettuce & spinach🍃, tomatoes🍅, red onion, avocado🥑, cherries🍒 & the BEST homemade hamburger bun croutons🍞( take 1 hamburger bun, cut it into cubes, spray with @chosenfoods avocado spray & season with salt, bake at 350 for 8-10 minutes).

Red, White & Blue Brownie Bites❤️💙
1 box @foodstirs brownie mix
1/4 cup chocolate chips
Homemade whipped cream (recipe below)
Raspberries
Blueberries

Directions
1. Mix brownie batter according to the box instructions. (I subbed in coconut oil & added extra chocolate chips.🍫)
2. Spoon mixture into mini cupcake pan & bake at 325 for 18 minutes.
3. Make whipped cream: Beat together 1 cup heavy whipping cream, 1 tsp vanilla & 1/4 cup sugar until soft peaks form. (Make sure bowl is chilled beforehand)
4. Top brownies with whipped cream & fruit.

When he willingly helps make & taste test your latest creation😊...& then you have the brilliant idea to include him in the photo op too.🤦🏼‍♀️ Not gonna lie, this pic was definitely taken with a lot of “try holding your fingers like this,” “move your hand up a little bit...ok now tilt it back down,” “I can’t see the screen hun...” “OMG ARE WE DONE YET?!” Buttt after a few moans & groans & one slightly messy counter top later, I think it’s safe to say we nailed it!👌🏻 So grateful for a man who partakes in my crazy obsessions with me (mostly) without complaining.😉 But hey at least he’s an AWESOME mixer though so that’s gotta count for something right?!😘 Anyways on to the food!👊🏻 PB RICE KRISPY ICE CREAM SANDWICHES -2 ways! 3 cups @kellogs_official Rice Krispies
1/2 cup corn syrup
@breyers chocolate chip ice cream

Hers: 3/4 cup + 2 Tbsp @peanutbutterco dark chocolate dreams pb
3 cups @kellogs_official Rice Krispies
2 Tbsp honey
@breyers vanilla ice cream
. -Directions for both: Mix pb, Rice Krispies & corn syrup/honey together. Press in bottom of 9x13 pan. Freeze. Top with a thick layer of ice cream. Freeze. Make another batch of Rice Krispie mixture & spread/press on top of ice cream layer. Freeze & serve!😋🍦

So some days I like to plan crazy elaborate meals that require lots of ingredients & prep work... And then other days I’m just like “welp let’s see what the fridge has in store for us today...”🤔 Today was definitely one of latter!😬 Buttt I figure as long as I have eggs, fruit & some sort of veggie I should good to go right?💁🏼‍♀️ And lo & behold what did I find today?? Exactly that!🙌🏻 Whipped this up in about 10 minutes or so & it was probably one of the most tastiest brunches I’ve ever made! Let me tell ya, if you’re looking to switch up you’re breakfast hash try adding some asparagus to it! You’ll be thanking me later!😉

STUFFED & LOADED! Just the way I like my Wednesday’s...& peppers!😉 Had such a blast in Texas this last weekend celebrating our loved one’s wedding🥂, kayaking🚣🏼‍♀️ & just living life!😎 (Not to mention ALL the bbq!😋) I gotta admit though, as much as I love traveling it feels soo good to be back home & in my own kitchen! Don’t get me wrong, I loved everything about the land of “fried, smothered & covered” but I was definitely craving some veggies hardcore afterwards.😋 Thankfully tonight’s meal has them ALL covered! 🙌🏻

Stuffed Peppers🌶
2 red peppers (1 per person), parboiled for 5 mins
1 lb. ground turkey
1 28oz. can crushed tomatoes
3 garlic cloves, chopped
Chopped onion
Riced cauliflower
Basil, to taste
Parsley, to taste
Red chili flakes, to taste
Salt & pepper, to taste
Mozzarella cheese

Directions
1. Sauté garlic & onion. Add ground turkey, cauliflower & seasonings. (I like A TON of seasoning so I’m pretty heavy handed with them.😋) Add 14oz. of crushed tomatoes & cook until thickened.
2. In a separate bowl, combine remained crushed tomatoes with basil & parsley to taste. Spread tomato mixture in the bottom of 9x13 pan. Cut peppers in half, place them in the pan & fill with turkey mixture.
3. Cook at 400 for 25-30 minutes. Top with cheese & broil until slightly browned. .

I’ll be honest with you, there’s really only been one thing on my mind lately...choc-o-late!🍫 (Anyone else feel me??🙋🏼‍♀️) I mean I’d give anything right now to sit down to a couple slices of this baby all slathered in nut butter, just dripping down the sides!🤤 (Ok Caitlin contain yourself now...😳) Luckily though I’ve got all the ingredients needed to make another batch & I bet that you do too! Definitely my most favorite bread yet & so decadent you’ll never guess that it’s loaded with veggies & all your essential nutrients too! Give it a try, you’ll be thanking me later!😉

Double Chocolate Chip Zucchini Bread🥒🍫
1 1/2 cups grated zucchini
1 cup flour
1/2 cup unsweetened coco powder
3/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/2 tsp instant coffee
1 cup milk chocolate chips
1 tsp @furtherfood collagen
2 eggs
1/4 coconut oil
1/4 cup vanilla Greek yogurt
1/2 cup coconut sugar
1 tsp vanilla

Directions
1. Squeeze grated zucchini in a paper towel to remove excess moisture. Set aside.
2. Mix together flour, coco powder, baking soda, baking powder, salt, instant coffee, chocolate chips & collagen.
3. In a separate bowl whisk together eggs, coconut oil, yogurt, coconut sugar & vanilla. Stir in zucchini. Then stir in dry ingredients. (Batter will be VERY thick)
4. Pour in a 9x5 loaf pan & bake at 350 for 45 minutes. Done!👌🏻

Have you ever been so excited for a trip & then suddenly realize, “Crap we’re leaving tomorrow...& I still haven’t packed yet...” Welcome to my life.😬 Heading out Texas for my boyfriend’s cousin’s wedding & still trying to figure out how I’m fitting everything I own into one suitcase... I swear I’m the worst over-packer in the world!🤦🏼‍♀️ One thing I don’t have to worry about over packing?? This fully loaded BBQ CHICKEN SALAD! Because what a better way to pregame the bbq capital of the world than with even more bbq!😂 Am I right?? Groovin’ like a Peruvian with this one here tonight!🕺🏼 (Not really sure if that works but I’m rolling with it!😉) Remember that marinade from my stories a little while ago?? Well here’s the finished product loves! PERUVIAN CHICKEN with JALAPEÑO CILANTRO SAUCE!😍🔥 I know this might seem a little basic but let me tell ya it sure packs a flavorful punch!👊🏻 I’ve always been a sucker for a good marinade/seasoning mix & believe they’re the perfect way to spice up a seemingly bland meal. Soo if that makes me a lover of simple meals then that’s A-ok with me!👌🏻 So ready for a little relaxation tonight after this crazy busy day & before a crazy busy weekend begins.💆🏼‍♀️

Family bbq’s never get old, especially when they look like this!😋 Spent yesterday at brunch with my girl @daniellec730 & then went on a grueling hike with the boy afterwards. (Hiking in 90 degree heat...not the smartest idea!😰) But man did I feel accomplished afterwards!💪🏻 ...and STARVING!😬Thankfully my family knows how to do Skewer Sunday right though!🙏🏻 Might’ve been a little sore today but my stomach & heart were full!
