This is a Gochujang-style sauce that draws inspiration from a 70-year old family recipe (see note about Gochujang below**) .
This sauce begins with a moderate level of both sweetness and spices, leading to a deep richness and umami flavor that becomes bolder with time. These are joined by the gentle acidity of lime which provides just enough tartness to balance the initial sweetness of this sauce. Next, the robust flavor and heat of peppers push center stage and is rounded out by a moderately salty finish. Finally, there is the perception of a mild smoky aftertaste, but this is perhaps created by the deep umami flavor found in this sauce.
This sauce adds heat and flavor to soups and sauces, and is an ideal dipping sauce for Korean BBQ meats, especially pork. It makes all kinds of asian-style noodle dishes and fried rice that much more flavorful. It has a medium amount of heat that we rank around a 1.5 on a 5 point heat scale.
