I always have a plate ready for kids while I prepare breakfast. They love it, especially the baby, but I was just wondering what you think. I know fruit should be eaten 30 mins before meals and 2 hours after meals but first thing in the morning ?

HEALTHY ORANGY PEACH CRISP - #glutenfree, #refinedsugarfree, baby appropriate .

When you are dying for a slice of ripe peach in winter, it's hard to believe one day in summer you might eat so many you will not want to even look at peaches at all. So when the farmers' market is full of this deliciousness, keep eating them hoping that you will immune yourself from craving them in winter. .

Today we made a healthy gluten-free peach crumble. A lemon would be perfect in this dish but I started making it not realizing I ran out of lemons so had to substitute with orange and it turned out fantastic! Beautiful flavor. .
.
The crumble part of it could use old-fashioned oats but since we are on a gluten-free diet for an experimental month, I used g/f quick oats. .
.
The recipe adapted from @theroastedroot. Just stumbled upon this girl and will definitely follow. .

INGREDIENTS:
.
4 large peaches
2 tbsp gluten-free flour
3 tbsp orange juice
1 tbsp orange zest
1 tsp vanilla extract
1/4 cup maple syrup
1/4 tsp cinnamon
Pinch nutmeg
Pinch seasalt
.

Crumble:
.
1 cup gluten-free flour
1/2 cup quick or better old-fashioned oats
1/4 cup maple syrup
1/4 tsp cinnamon
Pinch sea salt
1/3 cup coconut oil (melted)
.

METHOD:
.
.
1. Mix all the ingredients for the crumble well. Put in the fridge while making the rest.
2. Spice the peaches. Add all the other ingredients. Toss lightly.
3. Transfer the peach filling into a baking dish, spread the crumble topping on top. Bake for 50 minutes at 350F.
4. Cool before eating. .

CHIA JAM - raspberry-wild blueberry

You know those mushy berries that are about to go moldy on you in your fridge (especially raspberries and blackberries). So I take them, wash them, place them in a small pot, boil them for 10 minutes, turn off the heat, add 2-3 tablespoons of chia seeds (depending on the amount of berries), 1-2 tablespoons of lemon juice and 1 tablespoon of maple syrup. Today I used fresh raspberries and frozen wild blueberries. .

Once the jam cools off, it will thicken and harden. Keeps in the fridge in a jar for a week but you will eat it faster 😜. .

Enjoy with yogurt, pancakes, oatmeal, a toast. Delicious!

If you don't like the chia seed consistency, you can always give it a quick spin in the food processor. .

We are experimenting with gluten-free diet with my son for one month. We have a suspicion Soren is gluten sensitive. I have to say it's an adjustment. I'm so used to just popping in our numerous cafes and bakeries and picking up delicious healthy pastries and sandwiches, all of which have gluten. Now I have to work harder in the kitchen: more creativity, more time. But I like to be forced to try new recipes and to learn about alternative ingredients. .

Here is one of the recent favorites. If the mixture doesn't stick well enough (sometimes dates can be too dry to create stickiness), add a tbs of maple syrup. Pop them in the fridge after and they will harden beautifully. .

INGREDIENTS:

10 dates
5-6 dried apricots (❗️avoid sulfur dioxide preservative)
1/3 cup pumpkin seeds
1/4 chia seeds
2 tbsp almond or peanut butter
Coconut flakes .

METHOD:
.
.
The above measurements are approximate. Adjust as you wish. Maple syrup will glue things together if the mixture is too dry. .
.
Throw everything in the food blender and pulse for a good 5 minutes scraping the walls. Form little balls and put in the fridge. .

If there is one thing I swear by is lentils. I'm so lucky my kids like them because it's such an easy healthy #vegan, #glutenfree, low- maintenance dish you can always prepare with whatever you have in the fridge. .

Today I used red lentils because they cook really fast and become nice and mushy. You can add whatever spices you like; I used curry and turmeric and raw garlic. .
.
INGREDIENTS:
.
.
1 head of cauliflower
1 large zucchini
1.5 cups red lentils
2 cups loose spinach
1 teaspoon turmeric
1/2 teaspoon curry
3 cloves of garlic
Salt (only if cooking for kids over 1)

Parsley, dill, cilantro from the freezer (❗️I wash fresh cilantro, parsley, fill, dry it, chop and freeze in small bags. I add that to almost all dishes)

METHOD (mine is super easy)
.
.
In a large pot, start by sautéing chopped cauliflower in olive oil on medium heat (5 minutes). Add zucchini, spinach, spices. Stir. Wash the lentils and add to the pot. Pour enough water to barely cover the veggies (look at pictures). Bring to a boil, reduce heat and cook for 20-25 minutes. That's it. .

With a 9-months-old in the house I always have steamed or roasted veggies lying around. Sometimes they become pancakes, sometimes waffles. Today I had some leftover roasted butternut squash and turned it into very yummy pancakes. The recipe is very loose (sorry). I literally don't have a second to measure and write anything down these days. We have a major case of sibling rivalry here. I would appreciate any tips (other than the obvious ones)! Thank you. .

INGREDIENTS:

1 cup of butternut squash (pureed)
1 ripe banana
2 eggs
1 cup whole wheat flour (adjust as needed)
1 tsp baking powder
1/2 cup almond milk (or any milk)
1/4 cup coconut oil
Cinnamon
Vanilla powder .

METHOD: .
Mix all the ingredients and pan fry like regular pancakes. I used my band new non-stick pan so didn't have to use any butter or oil to fry. Loved it. No greasy little hands staining the furniture 😜.

We have done some traveling. Ufff. Not easy with the two munchkins. You always have this romanticized idea of how everything will be but in reality it will be as your toddler says. 🙈

One of the things I find the hardest is for the kids to eat healthy on trips. Partly, because it's vacation so hey why not indulge but partly because I give in to many things I wouldn't give in in our normal life in order to avoid bad behavior or crankiness. Like if a brownie will buy me 5 minutes to have a glass of rose- then it's a brownie time ☺️.

It's time my baby Elise had some pancakes. These are baby appropriate from 6 months. No sugar, no eggs, vegan!

These pancakes are a real treat. They are so naturally sweet they can easily pass for a dessert. Because of apples and bananas, they will not become perfectly crispy but who cares when they taste so amazing. Serve with some berry jam or yogurt.

INGREDIENTS:

1 grated Apple
1 mashed banana
1 vegan egg (1 tbsp flaxseeds + 3 tbsp water)
1/4 cup oat flour
1/4 cup spelt flour (or any other flour)

METHOD:
.
Make your vegan egg: mix 1 tbsp of ground flaxseeds with 3 tbsp of water. Stir for a bit until it becomes sticky. Grate the apple (with or without skin). Mash the banana. Mix all the ingredients together and pan fry using a tiny bit of coconut oil. .
