Zero added sugar or sweetener, #vegan, 2 ingredient deliciousness that even 6-month-old babies can eat! I promise it's so so good. .My baby Elise loved it. .

This nice-cream is just as good as real ice cream and ten times better than any sorbet. It's made with 2 frozen bananas and frozen dragon fruit purée. They sell it at Whole Foods in small frozen packs. That sounds pretty exotic, right? Well, you can achieve the same color by using 1/4 of a cooked red beet. Dragon fruit puréed didn't really add much flavor so swapping with the beet won't be a problem. Bananas make this nice-cream so so sweet. If craving extra sweetness, add some maple syrup. .

Peel and cut into pieces ripe bananas and freeze them in individual bags so that you can use as many as you like (otherwise it will become a big frozen mess). That's your base. Add to that anything frozen! you like: strawberries, blueberries, spinach. Blend in the blender until it becomes smooth. Enjoy. .

Tomorrow is Soren's first day at pre-school. He says he is ready 😜; we will see. He has been majorly attached to me especially in the last year when he had to share his mommy with his baby sister. We have gone through pretty terrible separation anxiety in his almost three years of life. I'm nervous about tomorrow but I also can see that both of us are now ready.

My temporary concern is also about the language. Soren's English is the worst of the three languages he speaks. He literally learned English through @blippiofficial in the last two months. So it's very basic. I mean very basic. I'll keep you posted on how it goes tomorrow. .

❗️These cookies have almond butter so it's a no no at school. But perfect for when the kiddos come back home. .

INGREDIENTS:

1/2 cups raw pumkin seeds
1/4 cup sunflower seeds
2 tbsp sesame seeds (I used toasted)
6-7 dates
2 tbsp almond butter
1 tbsp maple syrup
3 egg whites

METHOD: .
.
Beat the egg whites with a hand held mixer until it turns into thick foam. In a small food processor pulse all the other ingredients for 30-40 seconds until well blended. Fold the seed mixture into the egg whites until it's mixed evenly. With a tea spoon drop the dough onto the tray covered with parchment paper. With wet fingers fix the shape a little. Bake at 325 F for 18- 20 mins depending on your oven. Ready when start to brown. .

This is an all family #vegan meal which we all ate with quinoa. It's just pleasantly simple and fall-like.

My baby (11 months) loved to feed herself the pieces and my toddler requested pesto sauce on top of it. Works for me. .

INGREDIENTS:

1 butternut squash (peeled and cubes)
1 onion
2 large carrots
2 potatoes
2 garlic cloves
.
.
Herbs: I used a frozen mix of parsley, cilantro, dill and spring onion. (Just clean fresh herbs, dry, chop, mix and put in a container in the freezer. Or better yet place into an ice tray - that way you will have quick portions that slide out easily like ice cubes (a trick learned from @cookingforgrey - the girl I learnt half of my tricks from).

METHOD:
.
Roughly chop the onion. Start sautéing in a large pan for 3 minutes. Add everything except for garlic. Mix and continue sautéing for 10-12 minutes. Add 3 tbsp of water to the pan, add the garlic, close the lid, lower the heat and cook for 15-20 minutes without stirring. (You can stir but you will have a bit mushy texture). At the end, sprinkle with herbs. .

This speaks for itself. Easy and yummy. Sometimes I wonder why go through the effort of cutting the banana in pieces and topping it with messy peanut butter. I could just hand kids a full banana and stick a spoonful of peanut butter in their mouths, right? But it's not just about the calories, is it? Making food appealing boosts their interest in meals in general. The more fun the look, the higher the chances of kids trying new foods. My toddler prefers small bites and shapes for sure. .

RED LENTIL STEW with SWISS CHARD AND SQUASH- #vegan, #glutenfree .

This type of dish is my absolute savior. Red lentils cook really fast and are creamy and delicious. They go well with any vegetable so it's a perfect "clean the fridge" meal idea..
.
It is also an ideal dish for babies from 6 months. Even if you are feeding your babies the traditional way of purées (versus #babyledweaning), these creamy lentils are usually devoured by babies. They have lots of protein, vitamins and minerals. .
.
You can use any veggies but the basic idea is this: throw everything in the pot, pour water and cook for 20-25 minutes. Add any spices you like. .

INGREDIENTS: .
1.5 cups red lentils (washed)
1/2 large onion
2-3 celery stalks
5-6 leaves of Swiss chard
1 squash or zucchini
Basil (fresh or dry)
Turmeric
Garlic (fresh or powder)

METHOD:
.
In a medium pot, sauté chopped onion for 3 minutes. Add finely chopped celery. Cook for 5 minutes. Add finely chopped Swiss chard. Throw it your clean lentils and spices. Stir well. Add enough water to just come up to the top of your lentils (don't submerge lentils in water or you will get a soup -which is also delicious 😜). Close the lid and cook for 5 minutes. Add cubes squash. Cook for 10 minutes. .

For those who live in the country side - I'm so jealous. Especially in the last summer / autumn. You guys have access to the best produce straight from farms any time of the week. For us who live in the city - no such luxury. At best we sign up for farm shares delivered weekly or we go to the expensive farmer's markets. Not everything there is organic but fresh seasonal produce has so many vitamins that I choose it over organic stuff delivered across the world. Hope you do too. .

With my early riser (or non-sleeer) Elise, we prepared the CARROT ONION PORTOBELLO sauté at 6am this morning thinking to serve it with some grain for lunch. Then we went to the farmer's market and brought home a delicious whole wheat sourdough bread. Good-bye grains, hello crostini. The bread is actually not toasted but I like the word "crostini", he he. .

My family thought it was great enough for a party dish. Yum!

All very simple: just cut the bread, spread good-quality or homemade pesto, place veggie sauté (see recipe below), top with a fried egg and top with more pesto! Voila!

INGREDIENTS: (serve the remaining saute with mashed potatoes for dinner): 1 onion
5 carrots
3 large portobello mushrooms
2 garlic cloves
Dried basil
a touch of dried thyme.

METHOD:

Sauté chopped onions for 5 minutes, add grated carrots. Sauté for 5 minutes. Add chopped portobello mushrooms. Season with spices and salt and pepper (skip if serving babies under 1). Top with finely chopped garlic. Cook stirring for 10 minutes. Set aside to cool off. .

I have been taking a nice break from the internet world but decided to pop back in to share this yummy simple snack. Let your plantains sit on the counter top until their peel is covered with dark spots. Now that are ready for pan frying. Use a non-stick pan to avoid using lots of oil. I used just a few drops of coconut oil (avoid using lots because it's high in saturated fat - the one you need to avoid). Pan fry for 3 minutes on each side. .

And enjoy the BENEFITS of lots of fiber, potassium, Vitamin A and a decent amount of Vitamin C. .

When you are dying for a slice of ripe peach in winter, it's hard to believe one day in summer you might eat so many you will not want to even look at peaches at all. So when the farmers' market is full of this deliciousness, keep eating them hoping that you will immune yourself from craving them in winter. .

Today we made a healthy gluten-free peach crumble. A lemon would be perfect in this dish but I started making it not realizing I ran out of lemons so had to substitute with orange and it turned out fantastic! Beautiful flavor. .

The crumble part of it could use old-fashioned oats but since we are on a gluten-free diet for an experimental month, I used g/f quick oats. .
.
The recipe adapted from @theroastedroot. Just stumbled upon this girl and will definitely follow. .

INGREDIENTS:
.
4 large peaches
2 tbsp gluten-free flour
3 tbsp orange juice
1 tbsp orange zest
1 tsp vanilla extract
1/4 cup maple syrup
1/4 tsp cinnamon
Pinch nutmeg
Pinch seasalt
.

Crumble:
.
1 cup gluten-free flour
1/2 cup quick or better old-fashioned oats
1/4 cup maple syrup
1/4 tsp cinnamon
Pinch sea salt
1/3 cup coconut oil (melted)
.
.
METHOD:
.
.
1. Mix all the ingredients for the crumble well. Put in the fridge while making the rest.
2. Spice the peaches. Add all the other ingredients. Toss lightly.
3. Transfer the peach filling into a baking dish, spread the crumble topping on top. Bake for 50 minutes at 350F.
4. Cool before eating. .
