Here is my second favorite filling for the holiday pumpkin pie. You can find the perfect crust recipe two posts ago. Super fast and easy!

INGREDIENTS:

1 can pumpkin
1 (14 oz) can condensed milk
2 large eggs
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp salt

METHOD:

Preheat oven to 425 degrees. Whisk all ingredients together in a bowl until smooth. Pour into a crust (look two posts ago). Bake for 15 minutes. .

My favorite ways to fill the perfect pie crust from the previous post is with pumpkin cream cheese filling (by @pauladeen_official ) and pumpkin with condensed milk. Here is the first recipe. Check out the next post for the second yummy pie filling. .

INGREDIENTS:

3 packages cream cheese (8 oz each)
1 can puréed pumpkin
3 eggs plus 1 yolk
1/4 cup sour cream
1 1/2 cups sugar
1/2 tsp ground cinnamon
1/8 tsp fresh ground nutmeg
1/8 tsp ground cloves
2 TBSP all purpose flour
1 tsp vanilla extract .

METHOD:

Beat cream cheese until smooth. Add the rest of ingredients and beat together until well combined. Pour into a crust (recipe in previous post) and bake for 1 hour. Remove from the oven and let sit for 15 minutes. Cover with plastic and refrigerate for 4 hours. .

Look no further for a wonderful homemade pie crust. I have been making it for a few years and it never let me down. It’s buttery yet dry and crispy and doesn’t fall apart. Try it this week. .

Since I use my own IG as a recipe reference, I decided to finally write out this perfect pie crust recipe by Ina Garten @inagarten. Makes 2 open faced pie crusts. Can be refrigerated overnight and frozen for up to 1 month. .

INGREDIENTS:

12 TBSP (1 1/2 sticks) very cold unsalted butter
3 cups all-purpose flour
1 tsp kosher salt (put 2/3 if not kosher)
1 TBSP sugar
1/3 cup solidified coconut oil (or very cold vegetable shortening)
6-8 TBSP (about 1/2 cup) ice water

METHOD:

1. Dice the butter and return to the fridge. Place the flour, salt and sugar in the bowl of a food processor and pulse a few times to combine. Add the butter and coconut oil (hard). Pulse 8-12 times until the butter is the size of peas. With the processor running, add ice water and pulse until the dough begins to form. Then place it onto a floured board and roll into a ball. Wrap in plastic and refrigerate for 30 minutes (don’t skip that part). .

2. Cut the dough in half. Roll each piece on a well floured board into a circle, rolling from center to the edge, turning and flouring the dough to make sure it doesn’t stick. Fold the dough in half, place in a pie pan, and unfold to fit the pan. .

Ok these are just simple healthy little muffins. Not sweet! So if you need them to be sweet, please add honey, maple syrup or any other sweetener of choice. Easy quick snack for your kiddos, including babies who have already tried nut butters. .

INGREDIENTS:

1 very ripe banana
2 vegan eggs (2 tbsp flax seeds mixed with 6 tbsp of water until thick-ish)
2 tbsp peanut butter
1.5 tbsp coconut oil
1/2 cup brown rice flour
1/4 cup tapioca flour (starch)
1 tsp baking powder .

METHOD: .
Mash banana with fork or potato masher. Add vegan egg mixture. Stir well. Add the rest of ingredients and mix until combined well. Pour the dough into mini muffin tray, previously lightly greased with coconut oil (fill all the way to the top). Bake for 20 minutes at 350F. .

Just recently I purchased an Instantpot so I’m playing with all kinds of recipes. I bought it primarily so that I can throw the ingredients in, put it on delayed timer, go outside with kids and come back to a cooked dinner. My plan was to use it for grains and porridges but now I’m expanding my repertoire. I really like it so far.

This delicious soup can certainly be made on the stove as well (you’ll need to cook lentils for longer). But the below is the recipe for instant pot. .
.
INGREDIENTS:
.
.
1 small onion
2 garlic cloves
2 large carrots
2 large celery stalks
1 cup black lentils
1/2 cup regular lentils
2 chicken breasts .
.
1/2 tsp of dried basil
1/2 tsp of smoked paprika
1/3 tsp of thyme
1/3 tsp oregano
.
.
Salt (avoid for kids under 1)
.
.
METHOD:
.
.
Turn your instant pot to sauté function. Add 1 tbsp of olive oil. Sauté chopped onions for 5 minutes. Add chopped garlic. Sauté for 1 minute. Add carrots and celery. Cook for 2-3 minutes. Add the chicken. Mix and cook for a minute or two. Add lentils and enough water to cover the lentils at least by 1 inch (or more if you like your soup liquify). Close instant pot, seal the steaming valve and put on “soup” function for 25 minutes. When done, allow to stand for 20 minutes, which will naturally release the pressure. .

Living in New York you meet people of various nationalities daily. English is the last language you would hear at a playground; I mean, it’s really a melting pot here. Having such a diverse parent community is one the things I love about New York the most. Gotta tolerate those small living spaces for something, right?! .
.
So my small French mom community has influenced us a lot. French eat a lot of these salty cakes as they call them, which are basically savory tarts/ pies. It’s a convenient lunch-box meal and a good way to sneak in the veggies (if you have to). .
.
I had some leftover mozzarella (a rare item in my fridge) so I added it although you can totally avoid dairy and put tofu or sun dried tomatoes or anything you like really. .
.
INGREDIENTS:

3 eggs
1/2 cup brown rice flour
1/4 cup tapioca flour (arrow root or potato starch would work too)
1 tsp baking powder
2 tbsp coconut oil (or olive oil)
1/3 cup almond milk
.
Asparagus
Mozzarella, feta or tofu
.
.
METHOD:

Beat the eggs by hand. Slowly add the flour, starch and baking powder. Mix well. Then add the oil and milk. Mix well to avoid lumps. Chop asparagus and mozzarella cheese and add to the mixture. .

Bake for 45 mins at 375F. Let cool completely before cutting. .

SPAGHETTI SQUASH

Spaghetti squash doesn’t compare in taste to, say, butternut squash but it’s texture is very unique and fun. You can serve it with tomato sauce just like you would regular spaghetti pasta. .

Whether trying to avoid simple carbs yourself or trying to sneak more vegetables into your kids’ diet, I think this type of squash is the way to go. .

HOW TO BAKE:

Cut the squash lengthwise, remove the seeds with a spoon. Place cut-side down on a tray covered with parchment paper, add 3 tbsp of water to the tray and bake in the oven at 375F (190C) for 40-45 minutes (depending on the size of your squash). .

The best way to make children eat food ( we know a few picky eaters around, don't we?) and especially healthy foods is to involve them in the kitchen. Yes, it means more work for you as a parent but it's really important for them to participate so that can feel helpful and so that can see how food is made. If they scoop and stir by themselves, I guarantee you there is a greater chance of them trying this food and liking it. .
. ❗️❗️❗️A few tips: If you want your waffles to be crispy, cook them for longer but know that you are trading the green color for the brownish crust. Don't stack them on top of each other until they are fully cooled or they will sog.
