Buddha bowl? Macro bowl? Harvest bowl? Whoever came up with all these names that justify me throwing all the leftovers in a bowl - 👋🏻 high five sir, because reheating food never felt so right and I don’t even have a microwave. •

In my bowl I have some roasted butternut squash (cheated and used the frozen kind) roasted Japanese sweet potato (actually did that my self) spicy turmeric chickpeas, one jammy egg, avocado 🥑 and a dollop of the cashew dream sauce from @salsadeldiablo topped with someone’s onion, and some everything seasoning from @traderjoes . If you live in Salt Lake you’ve got to hunt down this cashew dream. They sell it every Saturday at the downtown farmers market @slcfarmersmarket

I can’t recall a day in December where I haven’t eaten a cookie 🍪 😛 I swear there is a never ending supply of cookies that sit at the top of my desk. Every time I get that much closer to finishing them they magically get replaced with brownies or cinnamon roasted nut. It’s truly a Christmas miracle 🤗✨so one small difference I am making this year with my Christmas diet is to bring clean treats to all of the parties I’m attending. That way I can still participate in the Christmas sugar high but I at least know what kind of ingredients I’m deciding to indulge in. •
These babies are no bake Gingerbread Truffles from the lovely @paleorunningmomma They are paleo and vegan and made out of creamy cashew butter sweetened with a couple of dates. The recipe is on her blog and if I could give you one tip as you set out to make these, really make sure you freeze the individual gingerbread dough balls before rolling them in chocolate. I definitely had a couple of ugly ones I hid in the back. 😅😅 HAPPY HOLIDAYS!!

PERSIMMON BUTTERNUT SQASH COCONUT SMOOTHIE I had to hunt far and wide for some persimmons #worthit seasonal smoothying at its finest 👌🏻dairy free, banana free (if you’re into that) and sugar free (bless you if you’re into that during this time of the year)

dEATS:
1/2 cup frozen cauliflower rice
1/2 a persimmon (adds the sweetness)
1/2 cup frozen butternut squash chunks (also adds a bit of sweetness)
1 cup of coconut milk (used the canned kind)
Add more water to reach desired consistency.
Hearty dash of cinnamon
Dainty dash of turmeric
Scoop of Protein of choice (I used @vitalproteins )
- blend and taste. If it’s not sweet enough for you add some frozen banana.
Topped with some @foragerproject cashew yogurt, almond butter and homemade granola.

Shakshuka to me 😉🙌🏻also it took me about four tries before I was able to spell this correctly. I forget how easy Shakshuka is to make and it makes for a healthy and impressive looking brunch. 👏🏻👏🏻I loosely followed a recipe from @food52 With side of bacon brought to you by the bf.

The tastiest breakfast mess ✨✨ I mean clearly someone needs to teach me how to soft boil an egg but other than that this plate was gold. 👌🏻—> 2 “soft boiled” eggs, smoked salmon, avocado, and some TJ everything bagel seasoning all on a Gg crackers (I just had to see what all the fuss was about). Life tip- Find a man who can lay tile and build walls but also bake apple strudel from scratch. ✨🙌🏻 some times i don’t know how I got so freakin lucky. This week the carrot head made the decision to reduce the size of Bears Ears and Grand Staircase-Escalante National monuments in the LARGEST elimination of land in American history. Currently bundled up in a big blanket staring at the snow outside and eating a smoothie bowl. (That’s right I said snow ❄️) one would think you would stop making smoothies when it’s below freezing outside but I’ve only just discovered Spirulina and I can’t stop. Spirulina is one of the most nutrient dense foods on the planet, says google, it’s technically an algae chalk full of vitamins, potassium, calcium, omega-3s powerful antioxidants and more. It’s been making me feel very energized in the morning and it can even help with increasing endurance and fat burning during exercise. I put it in this Coconut Pistachio Smoothie bowl and I can’t even taste it. 👌🏻has anyone else hopped on the Spirulina train?? #spirulina #smoothiebowl #smoothie

Happy Sunday from this stackkkk. We had a mildly lame day yesterday so I decided this morning had to start with a big win that is this Gluten Free Banana French toast.🍌🍯🥜 Recipe below. 👇

Yesterday we spent most of the day back and forth between Lowe’s getting stuff to fix some plumbing, our washing machine and a new light fixture. Pro tip - when you buy a chandelier on sale also consider how many lightbulbs the light requires so you don’t end up spending more money on light bulbs than the light itself. 🤦‍♀️ evidence in my stories. •
dEATS:
3 pieces of @udisglutenfree bread
2 eggs
Splash of almond milk
1 Tsp cinnamon
1/2 tbs coconut oil
1. Beat eggs, splash of almond milk and cinnamon in a bowl.
2. Heat skillet with coconut oil.
3. Soak both sides of each piece of bread until they absorb some of the egg mixture.
4. Cook on skillet for about a minute or two on each side.
5. I was out of syrup so I made a mixture of almond butter and honey for the topping. And then add all the bananas. #frenchtoast #sundayfunday #sundayvibes #brunch #breakfast

When that yolk dropss ✨🔥🍳 -egg in a hole tuna salad sandwich on this #toasttuesday or #tunatoasttuesday that’s a thing right?? Any way bite a big ole hole out of your bread throw it on the skillet with a little bit of @fourthandheart ghee then crack an egg in the hole. Makes for the perfect egg vessel and takes a simple tuna sandwich from 1 to 💯. For my tuna salad I used @safecatchfoods tuna, @sirkensingtons mustard, chopped almonds, apple and green onion and mixed it all in a bowl with some salt and pepper and chili flake. Anyone else practically roll themselves to work after this weekend? 🙋‍♀️🦃 don’t get me wrong I fully enjoyed every meal I ate this weekend with zero regrets but something about the challenge of cleaning up my diet actually gets me incredibly excited 😬its because I know I can change everything from how I feel to my mood with food! That’s crazy right?! Bodies are cool 😎 so I’m kicking off this week with some #fabfour pho from @bewellbykelly and making her genius freezer fudge. It’s soooo simple and the best quick chocolate fix 🍫😁


Recipe:
1 cup coconut oil
1/4 cup cocoa powder
8-10 drops of liquid Stevia (I omitted cause Im broke and stevia is expensive)
1/4- 1/2 cup of almond butter
Pink sea salt, I also added pistachios and unsweetened coconut chips

1. Melt coconut oil ( I did It in a sauce pan on the stove )
2. Add cocoa, stevia, almond butter.
3. Pour into silicone ice cube trays or into a glass container (then you can just cut them into squares later)
4. Freeze for 20 mins and then remove from ice cube tray and store in fridge.
