Stoked to be back in my kitchen, especially for the AM 🍳🥓🥞while I'll miss calling a chocolate croissant and an espresso a balanced meal im really a breakfast person at heart ❤️ we arrived back to SLC to some very fall weather so a cozy bowl of Coconut Banana Oats are exactly what I needed this morning. And trust me taking the extra minutes to caramelize this banana is totally worth it! Soooo delicious 👌🏻😁
1/2 cup of water
1/2 cup coconut milk
1/2 rolled oats
1/2 tsp of cinnamon
1 tsp maca
Dash of nutmeg
Tbs of chia seeds
1 scoop of @vitalproteins collagen peptides
1 tbs of honey or maple syrup if you like it sweeter
Toppings: cashews and almond granola, coconut flakes, caramelized banana, almond butter.
Simmer water, coconut milk and oats until oats are tender and cooked. While cooking add cinnamon, nutmeg, chia seeds, maca, collagen. Slice banana length wise and sauté nanner in a pan with a tsp of coconut oil and a spoonful of honey.
