Ravi our Head Teamaker recently had the pleasure of visiting Geng Xiang’s (which means More Fragrance) tea facility, where we source our Mao Feng Shui from. He cupped three different samples and landed on a clear favorite, however, nothing is decided on without cupping the teas back at the lab using our water, ensuring the closest match to flavor from season to season.⠀

Our Head Teamaker, Ravi Kroesen, is currently in Shanghai judging the World Teas Brewers Cup. On the first day of the competition, all twenty competitors are given an undisclosed tea 15 minutes before they're to brew it. Each contestant is judged on a range of criteria. The three categories are: flavor, technical and service/presentation. As a sensory judge, Ravi graded about 10-15 parameters in each category, like quality of infusion in the flavor category and whether or not the contestant made correct and consistent use of tea ware and appliances in the technical category.

There are many ways to brew tea and here at Smith Teamaker, we’ve tried them all. Or at the very least, the top 20. Once spring and summer hit, steeping sachets or loose-leaf tea in cool water for 10-16 hours, known as cold steeping, is a wonderful option when you want a refreshing crowd pleaser. ⠀

Our Head Teamaker, Ravi, recently paid a visit to our Mao Feng Shui grower in Wuyi County, which is located in central Zhejiang Province in Eastern China and should not be confused for the famous Wuyishan tea growing region in Fujian Province. It is an area famous for agriculture and tourism, most noteably Jinhua ham and hot springs respectively. Our Mao Feng is harvested from mid March to May. ⠀

For one magical night last Saturday, we turned our SE Tasting Room into a restaurant filled with the joyous clinks of champagne flutes (filled with tea, of course) and laughter amongst new friends and old. We collaborated Portland Monthly’s Chef of the Year Karl Holl on an exceptional dinner event, aptly named “Tea Drunk,” inspired by the season’s lush spring harvest and tea gardens around the world. Karl's menu featured tea-inspired dishes like a Spring Garden Salad, Tea Poached Halibut, and a Lord Bergamot Chocolate Custard. The food menu was complemented by a line-up of special teas and non-alcoholic offerings prepared by our head teamaker, Ravi Kroesen, and his celebrated team of teamakers. A favorite of the night was our DJ Rose, a non-alcoholic “rosé” crafted using a complex combination of delicate teas and botanicals steeped with river rocks harvested from the Willamette Valley for minerality. ⠀⠀

We had an amazing time introducing the guests to the wonders of tea and showcasing how it’s not only for drinking, but also makes for an incredible culinary ingredient. Keep a look out for more Tea Drunk tea events on the horizon. Cheers. #ThisisTeaTime
