Protein from the eggs and feta, healthy fats from the avocado, slow release carbohydrates and fibre from rye sourdough, vitamin C, phytonutrients, and lycopene from the tomato, and vitamin A, C and many phytonutrients from the basil!

An adaptation of one of my recipes and equally as quick to make and such a tasty snack!
Supports brain health, gut health, and heart health 👊🏻

3 overripe bananas, mashed
2 eggs, whisked
1 overripe mini pear, chopped
1/3 cup extra virgin oil
1/2 cup lupin flakes
1 1/2 cup wholemeal spelt flour
3 tablespoon ground flaxseeds
1 tablespoon hemp seeds
2 teaspoons cinnamon
1 teaspoon baking powder
1/2 cup blueberries, lightly folded in
1 tablespoon brown sugar, sprinkled on top

Pour into loaf tin and bake at 160 degrees for 55 minutes.

Source of fibre, protein, omega 3, and monounsaturated fats.

I often have parents asking about which muesli bar is best for themselves and their kids and to be honest there are not many that I would recommend. This one however, is one of the best on offer. High in fibre and resistant starch these bars provide a source of prebiotics for our healthy gut bugs. They also provide protein, B vitamins and phosphorus. They are also low in added sugar (many muesli bars are not) with just over half a teaspoon per bar. They can also be taken to school as they are nut free. These bars also won the best packaged snack award last year in the @hfgaustralia magazine. And they are tasty!

1 tablespoon chia seeds
