Parmesan Zucchini Spirals πŸ™Œ Love making these!!
Recipe here:
2 large zucchini
1 tbsp olive oil
1/2 cup panko breadcrumbs
1/2 cup parmesan
1/2 tsp paprika
1/2 tsp pepper
Method:
1. Preheat oven at 200 degrees celsius
2. Trim ends of zucchini and cut in half
3. Pierce with skewer
4. Hold knife at an angle and cut
5. Twist slowly and continue cutting until the end
6. Spread out the zucchini and drizzle with olive oil
7. Add remaining ingredients in a separate bowl
8. Sprinkle over zucchini and until well covered
9. Bake in oven for 40 mins (turn halfway)
10. Serve with your favourite dipping sauce and enjoy! 😜

The easiest peanut butter cookies!! πŸͺπŸͺπŸͺ You can almost do this with your eyes closed 😜
Recipe here:
1 cup smooth peanut butter
1/2 cup coconut sugar
1 egg
1 tsp vanilla bean paste
Method:
1. Preheat oven at 180 degrees celsius.
2. Combine all ingredients into a bowl and mix well.
3. Line baking tray with baking paper.
4. Roll dough into 12 balls and flatten slightly with the palm of your hand.
5. Using a fork, score the cookies with a cross.
6. Bake in the oven for approximately 12 minutes.
7. Let cool on a cooling rack and enjoy!!
8. Keep in an airtight container for 1 week.

Roasted Hasselback Pesto Potatoes!! Best thing ever!!! 😜
Recipe here:
1 kg large baking potatoes
Drizzle of olive oil
Pinch of salt
1 tbsp chopped rosemary
2 tbsp pesto
2 tbsp parmesan flakes
Method:
1. Preheat oven at 200 degrees celsius.
2. Using a pair of chopsticks. Place on both sides of the potato. This will stop the knife from slicing all the way through.
3. Slice the potatoes thinly, approximately 2mm apart.
4. Drizzle with olive oil, sprinkle of salt and rosemary.
5. Roast in the oven for 45 mins to 1 hour (depending on the size of your potatoes).
6. Once cooked, serve with pesto and a sprinkle of parmesan flakes.
7. Soooooo good... I’m drooling 😜
